Gluten-free Belgian waffles are sweet waffles from Generous, baked with rice flour instead of wheat, using lactose-free milk and lactose-free clarified butter. The result is an authentic Belgian waffle that is both gluten-free and lactose-free: baked to a golden brown, soft inside, with the delicate sweetness of cane sugar.

Golden brown, soft, and sweet

The waffle smells of butter and caramel, followed by the delicate sweetness of cane sugar and the soft, fluffy crumb underneath. You can taste the Belgian waffle tradition, just without the wheat.

The outside of the waffle is slightly firm, while the inside remains soft and moist, just as a good Belgian waffle should be. Crispy, airy, and delicious, without missing the wheat. Because the dough is made with lactose-free clarified butter and lactose-free milk, they have a pleasantly buttery taste, and those who avoid lactose can enjoy them without hesitation. Made with rice flour instead of wheat

For these Belgian waffles, Generous uses a base of rice flour, which is naturally gluten-free.

Instead of wheat flour, fine rice flour provides the structure, while eggs and a little guar gum bind the dough; cane sugar provides the sweetness and the golden color during baking. This is an art when it comes to waffles, as the lack of wheat gluten means the dough often lacks hold. At Generous, however, the waffle remains elastic and soft instead of crumbling. This creates gluten-free Belgian waffles that are neither dry nor crumbly, but soft and moist. They join our sweet baked goods collection like a Sunday breakfast fits into the week.

Who could bake gluten-free Belgian waffles better than a bakery from Belgium itself? They are handcrafted in Tubize using organic ingredients and Belgian patience. Since 2013, Christophe has built up the bakery together with his wife, Théodora, and Brussels-based bakers Jean-Benoît and Aurélie Ghenne. As Christophe sees it, good taste doesn't need wheat, and sometimes it doesn't need lactose either. The entire mission is to ensure that the gluten-free waffle tastes like a real waffle and not a compromise.

For Sunday coffee, warmed up or plain

The pack contains 250g of waffles, enough for the whole family on the weekend. They go beautifully with coffee, cocoa, or as a sweet dessert. Warmed briefly in the toaster or pan, they smell like they were freshly baked, with a crispy edge and a soft center; they taste just as good plain. Stored in a cool, dry place, they remain wonderfully soft.
