Charlotte Chocolat are gluten-free chocolate cookies from Generous, baked from a blend of buckwheat, potato starch, and tapioca. The crumbly dough contains cocoa, 6.7% chocolate, and 5.6% roasted hazelnuts, plus a pinch of fleur de sel. This turns the biscuit into a rich, nutty delight with a fine, almost elegant salty accent.

Cocoa, hazelnut, and a hint of salt

Charlotte tastes first of dark cocoa, then come the roasted hazelnuts, and finally the fine salt.

The fleur de sel enhances the chocolate, just as a pinch of salt does for caramel. The cookie crumbles melt-in-the-mouth, the hazelnut provides crunch, and the cocoa finish lingers. From a gluten-free bakery in Belgium

Christophe Harou founded Generous in 2013 after discovering his gluten intolerance and refusing to give up good pastries.

In the workshop in Tubize, the cookies are made by hand using organic ingredients. Together with his wife Théodora and Brussels-based bakers Jean-Benoît and Aurélie Ghenne, Christophe built the bakery, following Belgian tradition and aiming for as little waste as possible. In Christophe's view, good taste doesn't need wheat. Every variety has its own name and character, and Charlotte is the chocolaty-elegant one among them. What began in 2013 is today a whole family of gluten-free cookies, each with its own personality.

With an espresso or a glass of milk
