For this alcohol-free sparkling wine, white wine was de-alcoholized and enriched with must. All steps up to the sparkling process are the same as for its Cava counterparts. The grapes come from their own vineyards in the Penedès wine region in Catalonia and those of befriended winemakers. The harvest of the Parellada, Macabeo, and Xarel.lo grape varieties takes place in the cool morning hours to prevent the grapes from oxidizing. During the harvest, the grapes are selected to ensure their optimal quality before pressing. The grapes ferment at controlled temperatures in stainless steel tanks to preserve their freshness. The white wine, now a Cava base, is de-alcoholized and enriched with grape juice before being carbonated. The result is alcohol-free and vegan. This sparkling drink made from alcohol-free wine should ideally be served at 6 to 8 °C.
