Belgian mayonnaise is the sauce that belongs with every portion of fries in Belgium, and Jean Bâton brings it to your home from a small manufactory in Udenhout. It is creamier and zestier than the familiar German mayonnaise, with a noticeable mustard note and a fine, clear acidity. Free-range egg yolk and carefully blended oil make it rich and smooth. Jean Bâton has been producing this range since 2013, with the care of a head chef.

Creamy, zesty, with a clear mustard note

The Belgian Recipe is thick and smooth, a light ivory color, with finely visible mustard seeds. It has a fresh aroma of vinegar and mustard, with a subtle herbal note underneath.

On the palate, it is full and creamy; the acidity keeps it lively, and the mustard provides its backbone. Unlike a sweet-leaning mayonnaise, it remains savory, zesty, and piquant, with a long, salty-fresh finish. You can taste why Belgians prefer to dip their fries in this sauce rather than in ketchup. Anyone who has tried it understands why no paper cone of fries in Belgium is complete without it.

For fries, frikandel, and sandwiches

Its stage is wherever things get crispy and savory.

Classically, it belongs with golden fries, served thick and creamy on the side, just like at any Belgian friture. It is equally good with frikandel, fried fish, or in a hearty roast beef sandwich. It also works well as a base for a sauce Andalouse, mixed with a little tomato paste and paprika.

A dollop with baked potatoes, grilled vegetables, or a hard-boiled egg takes the simple up a notch. And anyone who has tried this Belgian mayonnaise with fresh asparagus will reach for it again next spring. For something earthier and more sophisticated, there is the Black Truffle Mayonnaise, the second variety from Jean Bâton.

From the ship's galley to Udenhout

Behind Jean Bâton is the story of Jan Stok, who signed on in 1950 as a chef garde manger on the Holland America Line cruise ships, where he was responsible for the cold kitchen.

For over 10 years, he prepared sauces in the ship's kitchens, and his French colleagues promptly dubbed his Dutch name "Jean Bâton." In 2013, his youngest son, Bart, picked up the idea and launched a range of special mayonnaises, produced in a small manufactory in Udenhout.

The Belgian mayonnaise represents the way the sauce is enjoyed west of the border: stronger in mustard, clearer in acidity, and completely sugar-free. We carry two varieties of it; you can find the entire selection in the Jean Bâton assortment, and more creamy items in the mayonnaise section.

Double-fried at one hundred and seventy-five degrees

The Belgian Recipe has its classic appearance with a portion of homemade fries: potato sticks double-fried at 175 degrees until golden brown and crispy, served with the mayonnaise from the 245 ml jar in a small bowl. A good fry night doesn't need anything more. Once opened, it will keep for a few weeks in the refrigerator.

Hinter dem Namen steht Jan Stok, der ab 1950 als Chef Garde Manger auf den Schiffen der Holland America Line die kalten Saucen verantwortete – seine französischen Kollegen tauften seinen niederländischen Namen auf „Jean Bâton“. 2013 griff sein Sohn Bart die Idee auf und bringt seither in einer kleinen Manufaktur in Udenhout besondere Mayonnaisen heraus, von der belgischen Rezeptur bis zur Variante mit echtem schwarzem Trüffel.
