Murray River Salt's Pink Salt Flakes are Australia’s most famous salt flakes: delicate, pyramid-shaped, and naturally colored in apricot-pink. The brine for them comes from an ancient underground inland sea in the Murray-Darling Basin – it is pumped to the surface near Mildura and transformed into paper-thin flakes in shallow crystallization ponds.

Mild, crunchy, and naturally pink

The pink coloration is not a dye, but a matter of origin: the mineral-rich brine of the prehistoric sea gives the flakes their warm apricot tone, completely without additives. They melt mildly and delicately on the tongue – significantly softer than many sea salts, with a mellow, almost creamy saline profile.

It is precisely this mildness that makes the flakes so popular with chefs: they season without dominating, and their color turns every plate into a small still life. Finishing salt in the best sense – crush, sprinkle, marvel.

The shape is also a statement: in the shallow ponds, the crystals grow slowly into small, hollow pyramids that crumble almost by themselves between your fingers. Thin, light, crunchy – this way, the salt remains on the dish instead of sinking into it, and you decide with every pinch just how much seasoning you end up with.

The finale for meat, fish, and vegetables

Harvesting salt, protecting the river

Behind these flakes is a family story: Duncan and Jan Thomson started their SunSalt saltern in 1983 in Hattah, in the northwest of Victoria – and founded Murray River Salt in the year 2000. Today, the brine is harvested in the Mourquong Basin, about 13 kilometers northwest of Mildura.

The clever part: the saline groundwater there is purposefully pumped out before it can salinate the Murray River – so every bag of flakes literally protects the fresh water of the Murray-Darling Basin. This concept convinces us: a salt harvested by a 100 percent Australian family business that works closely with authorities on river conservation.
