The Pasini Ceppo 326 Rosè Spumante is a 2019 vintage sparkling wine with no dosage, made from organically certified grapes using traditional bottle fermentation. The Pasini San Giovanni winery is located in Raffa, near Lake Garda in Lombardy, and has been passionately producing sparkling wine in small batches since 1977. "After all, there's always something to celebrate," says Paulo Pasini, who produces this exceptional Rosé Spumante with his cousin Luca.

A Masterpiece of Vinification

Already in 2008, the Pasini family, known for their Lugana, planted the rare, indigenous grape variety Erbamat specifically for sparkling wine production. For about 10 years now, in good years, the vintage sparkling wine Ceppo 326 Rosé has been produced from it. The white grape variety Erbamat has a distinctive acidity and contributes freshness and structure. Blended with the local red wine grape Groppello, which is reminiscent of Pinot Noir and brings minerality to the sparkling wine, nearly 3,000 bottles of Rosé Spumante are produced.

Production Process

The production of this exquisite sparkling wine follows the traditional method, fermented in the bottle according to the "classic method." Learn more about the careful production with a special focus on natural processes:

This multi-faceted, exceptional sparkling wine ages for 36 months on its lees in the bottle and is disgorged by hand without the addition of any dosage, to highlight the finesse and harmony of the Groppello and Erbamat grapes. For this, the grapes are first harvested at their optimal ripeness and vinified separately in stainless steel; the Groppello remains on the skins only briefly before being gently pressed and, as a rosé wine, joins the white wine from Erbamat grapes in the bottle. After approximately 36 months on the lees, it is bottled without a shipping dosage. This makes it wonderfully dry and reveals its unique minerality.

Flavor Profile

The Pasini Ceppo 326 Rosé is pale pink in color, bright, with fine perlage. Fragrant and lively on the nose, with notes of small fruits (wild strawberries and currants), crème pâtissière, a hint of bitter orange peel, and white jasmine and acacia blossoms. Delicate and elegant, with a finish characterized by mineral notes and a hint of ground white pepper. An Italian sparkling wine of great harmony, elegant, with great persistence.
