Clear and amber-colored in the glass, the young Vinagre de Jerez offers a powerful yet rounded acidity, accompanied by fine notes of wine, nuts, and oak.
Because it is young, it is more lively and direct than its long-aged sibling, with a crisp sharpness that instantly enlivens any dressing. Nevertheless, it remains soft enough not to be harsh, as its months in the barrel have rounded it out. Just a splash, and a tired salad is brought back to life.
Unlike a thick reduction, it remains thin and clear; it is intended to season, not to overwhelm. That is exactly what makes it so versatile—one splash gives a dish definition without making it sweet.
A splash for salads, sauces, and marinades
Vinagre de Jerez is the workhorse vinegar in the kitchen, made for salads, sauces, and marinades.
A classic dressing of good olive oil, a little mustard, and a pinch of salt is its natural home, whether over leafy greens, tomatoes, or grilled vegetables. A dash elevates a gazpacho, a lentil soup, or a meat sauce, and when you use it to deglaze a pan, it adds a fine depth. We keep it within reach next to the olive oil in its 375 ml bottle.
It pairs wonderfully with sautéed mushrooms, in a vinaigrette for chickpeas, or over steamed vegetables. A splash even goes well over a bowl of ripe strawberries or in a summer drink—that is how versatile a good Sherry vinegar can be. Vinagre de Jerez with DOP from Andalusia
Sherry vinegar can only be called Vinagre de Jerez if it is aged in the Sherry Triangle between Jerez, Sanlúcar de Barrameda, and El Puerto de Santa María and has at least 7 degrees of acidity.
It rests in oak barrels for at least 6 months, usually in the same Solera system as the Sherry, with the Consejo Regulador overseeing its origin and quality. Thus, every bottle carries the protected designation of origin (DOP), which the Páez family upholds in Jerez de la Frontera. A young vinegar like this brings that protected origin into your daily cooking without breaking the bank.
