Prunus domestica, as the common plum originally from Asia Minor is called, belongs to the rose family. The stone fruit is pitted by hand and cooked with just a little sugar and lemon juice. The Alpe Pragas Plum Fruit Spread tastes great on warm crêpes or with quark or yogurt. We particularly like this variety because it's not plum butter or plum jam, but a fruit spread with a high fruit content.
In the Val Pusteria, the Gruber family has been cultivating berries at an altitude of approximately 1250 m since 1994. In this alpine mountain climate, the fruits ripen longer, thus developing a particularly intense aroma. Great importance is placed on cultivating the fruits as naturally as possible: the seedlings are planted by hand, the fields are weeded several times until harvest, and irrigated with river and spring water from the Dolomites.

Alpe Pragas – Goals for the future
Stefan Gruber's next major goal is CO2-neutral production by 2027. To achieve this, in 2010 he built a state-of-the-art production facility, as well as an Alpine-designed sales and tasting room, and a new office wing. The processing of fruits is an innovative process, yet as much as possible is done by hand. By optimizing production processes, resources can be conserved and energy saved, and waste has also been reduced. As a family man, he feels responsible for treating the resources of water, energy, air, and soil carefully for the next generation. Stefan Gruber loves the region where he grew up and now lives with his family. "We want to produce green and become an ECO-Manufactory," he tells us.
