Non-alcoholic Sparkling Tea Blå from Copenhagen

Sparkling Tea Blå is a non-alcoholic sparkling beverage made from 13 organic teas, brewed rather than pressed. Jasmine, chamomile, and white tea give it its softness, while grape juice provides the sweetness. It is not de-alcoholized wine, but rather conceived without alcohol from the very beginning.

Sparkling Tea Blå is the non-alcoholic classic from the Copenhagen Sparkling Tea Company, a sparkling tea beverage with a blue label from Copenhagen. 13 organic tea varieties meet grape juice and a fine effervescence, completely without alcohol. If you are looking for something sparkling to toast with and do not want to compromise on complexity, this is the right choice.

Jasmine, quince, and a long finish

On the nose, Blå blossoms: jasmine first, followed by quince, chamomile, and the quiet coolness of white tea.

On the palate, the floral opening turns into something more serious. 19 percent white tea lays a soft foundation, 14 percent jasmine tea provides the fragrance, and 3 percent Darjeeling draws a fine line of tannins through it. Floral, fresh, silky – that is how it sits in the glass.

In the finish, the black tea emerges with a tartness that neatly balances the 50 grams of grape juice sweetness per liter. Blå contains 12.6 milligrams of caffeine per 100 milliliters. It likes it when you give it time.

For scallops, macarons, and light appetizers

Blå is intended as an aperitif, but can do much more: it accompanies appetizers, light main courses, and most desserts.

At Geranium in Copenhagen, awarded 3 Michelin stars, it is on the menu. "The perfect aperitif," says restaurant manager Mikael Båth simply. At TRIO, it is served with scallops, because the soft jasmine absorbs the sweetness of the scallop, while the freshness holds its own against cucumber and rosehip.

Pastry chef Torben Bang, in turn, placed it next to French macarons. The jasmine continues there what the pastry suggests – delicate, sweet, soft – and the effervescence cleanses the palate in between. Because there is not a drop of alcohol in Blå, no one at the table is sitting there with a glass of water on the side.

Serve it well-chilled at about 5 degrees in a wide-bowled glass – a narrow flute robs the jasmine of room to breathe. If you like it drier, reach for the Lyserød; anyone planning oysters and caviar will find a more mineral-forward brother in the Lysegrøn.

Why Jacob Kocemba brews the tea instead of pressing it

In 2010, as a sommelier in a Copenhagen Michelin-starred restaurant, Jacob Kocemba stood before a cellar with over 1,700 wines – and could not find a suitable one for a dessert.

So he brewed a tea extract. This predicament turned into a company in 2017: Kocemba and his business partner Bo Sten Hansen sold their first bottle on May 26th.

To this day, every tea is steeped individually, each with its own temperature and its own steeping time, because a Silver Needle cannot handle what an Assam requires. Too hot, and the white tea turns bitter; too cool, and the black tea gives nothing. Only when each infusion is perfect on its own is the cuvée created – just as a winemaker blends their grape varieties.

The carbonation is added, not from bottle fermentation – instead, Blå matures for 8 to 12 weeks in the bottle and ends up under 5 bar of pressure. This results in an effervescence that does not need to hide: fine-bubbled, persistent, and restrained.

The experts noticed this early on. In 2018, BIOFACH named the Sparkling Tea the best organic product, in 2020 Blå was a finalist in the World Beverage Innovation Award, in 2025 the USA Spirits Ratings gave it Gold with 90 points, and Falstaff awarded it 92 out of 100. Today, over 100 Michelin-starred establishments in more than 50 countries serve these teas. Quite impressive.
