Fleur de Sel delicately harvested from the water's surface

Fleur de Sel, the "flower of salt," is the paper-thin layer of crystals that forms on the salt basins of Guérande on calm summer days. L'Atelier du Sel harvests it by hand – unwashed, uncrushed, and IGP-protected for its origin. A finishing salt for the plate, not a cooking salt for the pot.

Fleur de Sel de Guérande IGP is the finest harvest from the paludiers at L'Atelier du Sel, the workshop run by Morel and Le Chantoux: white, delicate crystals that only emerge when sun, wind, and still water interact. Using the lousse, the salt farmers' flat skimming tool, Gilles and Matthieu glide across the water's surface to collect it – a task of millimeter precision, performed anew on every good summer day.

The crystals are crispy, delicate, and subtly salty all at once: they crack softly between your teeth and melt immediately after, leaving a mild, almost floral saltiness without any bitterness. It is precisely this play between crunch and melt that makes the "flower of salt" so coveted.

A few crystals just before the first bite

Fleur de Sel never goes into the cooking pot; it is always added at the end to the finished dish – as a finish that elevates both flavor and texture.

At home, it is perfect on a soft-boiled egg, on medium-rare roasted ribeye, and – an experience in itself – on sweet melon or dark chocolate, where the salt makes the sweetness shine. Equally delightful: on tomatoes with good olive oil or on fresh goat cheese with a drop of honey. For daily cooking, use the fine sea salt in a shaker; the flower of salt belongs to the moment at the table.

The bloom only forms on calm summer days

Fleur de Sel forms as a delicate layer on the water surface of the harvesting basins – but only when the sun is strong, the wind is gentle, and the water is still.

The calmer the day, the finer the bloom: a single gust of wind in the afternoon can cause the crystals to sink, at which point they become part of the grey salt on the basin floor. This is why the flower of salt is the smallest and most precious harvest from the 46 basins in the Mès region near Assérac – hand-harvested, never scraped from the bottom, and neither washed nor treated.

Since 2012, Guérande salt has been protected as an IGP, the first salt in France to receive this status – the workshop of Gilles and Matthieu has carried the blue and yellow seal since 2014. It guarantees you the origin and hand-harvesting process with every package.

Four paludiers and their most precious harvest

Behind L'Atelier du Sel are Gilles Morel, his nephew Matthieu Le Chantoux, as well as Alexandre Moret and Hugues Martineau – an independent family workshop in Saint-Molf, founded in 2014.

The purity of the Fleur de Sel depends solely on the precision of the hand that harvests it, as Gilles and Matthieu emphasize – which is why any form of mechanization is excluded here. All of the family's salts, from the L'Atelier du Sel assortment to the vegetable bouillon, come from the same salt marshes and the same workshop.

A mill would destroy the blossoms

Take the crystals out of the 125g package with your fingers or put them in a small salt cellar – a mill would only destroy the delicate blossoms. A pinch per plate is enough. Stored in a cool, dry place, the slight residual moisture keeps the Fleur de Sel supple – this is part of its nature and a sign of a genuine hand-harvest. And don't worry about small clumps: rubbed briefly between your fingers, the crystals bloom again.
