Fine sea salt from Guérande for every day

The fine sea salt from L'Atelier du Sel is harvested by hand in the Mès basin near Assérac, dried in a solar dryer, and finely sifted. Natural, unwashed, untreated – an everyday salt from independent artisanal work, not a refined industrial salt with anti-caking agents.

Fine sea salt from Guérande is the salt for every day from the small salt workshop L'Atelier du Sel on the southern Breton Atlantic coast – Sel Fin de Guérande, as the French call it. It comes to you in a 150g kraft paper shaker, sealed with a cornstarch lid. That way, the sea is right next to your stove – ready to hand from your breakfast egg to pasta water.

On the tongue, it is gentle, mineral, and present, without the harsh notes that refined salts sometimes bring. The fine crystals dissolve quickly, in dough just as in dressing. This salt does not push itself to the foreground – it bolsters your ingredients.

From breakfast egg to pasta water

Fine sea salt is the working salt of the kitchen: it seasons while cooking, flavors sauces, and goes into doughs, marinades, and pasta water – a little bit of it, and the pasta tastes as it should.

From the shaker, it belongs on roasted vegetables and tomato bread, in summer even on watermelon with a drizzle of olive oil. It also makes an appearance in sweet yeast dough – a small pinch makes the flavors clearer. It is intentionally too fine for salt mills; instead, it trickles exactly where you need it.

And when the moment calls for a grand entrance, the salt flower takes over: Fleur de Sel de Guérande IGP, in 125g, crunches as a finish over steak, caprese, or chocolate tart. The fine salt makes the everyday, the Fleur de Sel the festive days.

Hand-harvested in the Mès basin near Assérac

This sea salt is created in two salt marshes with 46 harvesting basins in the Mès basin near Assérac, on the northern edge of the Guérande peninsula.

Atlantic water travels from basin to basin through the clay; sun and wind concentrate the brine step by step – and the more leisurely this journey, the purer the salt crystallizes in the end. In summer, it is pulled by hand, without any machines, neither washed nor treated. Since 2014, their salt has carried the European origin label IGP.

For the fine grain, the paludiers came up with something: the salt is sifted and then dried in their own solar dryer – a drying chamber that runs on solar energy for a few days to weeks, depending on what the weather allows. The electricity is supplied by solar panels on the workshop roof in Saint-Molf. Drying with the same power that created the salt – it hardly gets more consistent than that.

Four paludiers, one family workshop in Saint-Molf

Behind L'Atelier du Sel – the workshop also operates under the family name Morel et Le Chantoux – stand Gilles Morel and his nephew Matthieu Le Chantoux, who founded it in 2014. Today, they harvest together with Alexandre Moret and Hugues Martineau.

The profession of the paludier is passed down in the family here, and with it a conviction: no mechanization, so that the structure and taste of the salt remain as the sea forms them – as Gilles and Matthieu emphasize. Since the beginning, the social workshop ESAT in nearby Leniphen has helped with packaging. Handwork, family, responsibility – that is how the small workshop has worked since the first day.

Stays dry and free-flowing to the last grain

Keep the shaker in a dry place, and the salt will remain free-flowing to the last grain. The breakfast egg gets a touch of fine sea salt first, then a trace of herb salt from Guérande – a good morning needs nothing more.
