Fleur de Sel de Guérande, harvested by hand from the sea

Fleur de Sel de Guérande is the delicate "flower of salt" that the house of Le Paludier sources from about 90 independent salt farmers on the Breton coast. Hand-harvested, unwashed, and untreated. A finishing salt for the plate, not a cooking salt for the pot.

Fleur de Sel de Guérande from the house of Le Paludier de Guérande is fine sea salt from the salt marshes of southern Brittany, harvested by the "paludiers" (salt harvesters) of the peninsula. On the purple linen box, a salt farmer carries her basket across the salt meadow – an image that has represented this craft for generations. Récoltée à la main, harvested by hand.

The crystals are delicate, crisp, and salty, yet white and as rare as almost any other salt. They crackle briefly on the tongue and then melt away, mild and fine, with a saltiness entirely without sharpness or bitterness. This is what Brittany tastes like.

A few crystals as a final touch

Never sprinkle the flower of salt into the pot; always add it to the finished plate—as a finishing salt that provides both flavor and texture.

For us, it goes on a soft-boiled breakfast egg, on quick-seared meat, and on ripe tomatoes with good olive oil. On dark chocolate or caramel, it shows its other side, because a pinch of salt truly awakens the sweetness. For everyday seasoning in the pot, the fine Guérande salt in the shaker is the right choice; save the flower of salt for the moment at the table.

With the "lousse" over the still water

The flower of salt is harvested by hand with a "lousse," a flat sieve on a long handle that the paludier gently guides over the water's surface.

Only on warm, windless days does this fine layer of crystals form on the water at all; as soon as the wind picks up, it sinks and becomes gray "sel gris" on the bottom of the basin. Thus, the flower remains the smallest and most delicate harvest of the year, removed with a steady hand and never by machine. You can taste exactly this level of care in its clear, mild character.

Le Paludier de Guérande since 1975

Behind the purple box stands the Bourdic company, established in 1975 in the Breton town of Batz-sur-Mer on the edge of the salt marshes. Harvested by hand, nothing washed, nothing added, just as the Etablissements Bourdic uphold for Guérande.

With the Le Paludier brand, Bourdic consolidates the harvest of about 90 independent salt harvesters. Of the 2,200 hectares of salt marshes between Guérande, Batz-sur-Mer, and Le Croisic, the company itself owns about 10 percent and is restoring as many basins as possible – a region that has been under protection for centuries.

The entire peninsula produces an average of 600 tons of Fleur de Sel per year, every flower harvested by hand; in poor summers, the harvest almost fails. The profession of paludier is often passed down from father to son here, along with the knowledge of wind, water, and the right moment.

The box bears the blue and yellow IGP seal, which has identified Guérande salt as a protected origin since 2012 – the specifications allow only salt from this peninsula. You can find the same protected origin, harvested by other hands, among other Fleur de Sel harvests.

A small salt cellar by the stove

The flower of salt does not like a grinder – it would only crush the delicate crystals. Instead, take it with your fingers from the 125g box or keep a small salt cellar by the stove; a pinch per plate is enough.

Stored in a cool, dry place, the Fleur de Sel remains loose; the slight residual moisture is part of hand-harvested salt and is a sign of true artisanal quality. And if you like it a bit spicier, reach for the Guérande salt with pepper and pink peppercorns sometimes. Simply amazing, so much flavor from sun, wind, and sea.

Rund 90 unabhängige Paludiers schöpfen die Salzblume von Hand aus den Marais salants der Guérande-Halbinsel, das Haus lagert sie in einer alten Salorge und füllt sie ab.
