The town of Maldon at the mouth of the River Blackwater has lived off salt for centuries: the Romans were already extracting salt from seawater here, and the Domesday Book of 1086 records salt pans in the area. The Osborne family has continued this legacy since 1882, now in its fourth generation under Steve Osborne.

The principle remains unchanged: seawater from the spring tides around the full and new moon is filtered, slowly boiled in shallow pans, and the pyramids are harvested by hand with long rakes.
