Mussini Emozione No 12 Bianco – White Dressing

The Mussini Emozione No 12 Bianco is a white balsamic condiment from Acetaia Mussini. A condiment is a type of dressing, here a mixture of concentrated grape must and wine vinegar. It retains its light color because the grape must is not cooked down at high temperatures, so the sugar it contains does not caramelize and thus does not turn brown. Its rich flavor is sweet and sour and is characterized by a lower acidity of 4%.

Emozione No 12 Bianco – Balanced Balsamic Condiment

The Mussini Condimento Emozione No 12 Bianco shows good density (1.28), which it owes to long aging in wooden barrels of various sizes. Through the wood, some of the liquid evaporates and its viscosity increases. This fine, creamy dressing has a full must flavor and a wonderful balance between sweetness and acidity.

The Condimento Emozione No 12 Bianco is therefore ideal wherever the dark color of an Aceto Balsamico would be undesirable: excellent with steamed fish, light meat, poultry, crisp green salads, and Mediterranean vegetables.
