Il Denso, an award-winning Aceto Balsamico from Modena

Mussini Il Denso is an award-winning Aceto Balsamico di Modena PGI from Acetaia Mussini – dense, dark, and containing a portion of vinegar aged for ten years. In 2021, it took second place in a competition held by the magazine *Der Feinschmecker*. This is no everyday vinegar, but a balsamic for the big stage.

Aceto Balsamico di Modena in its dense form: Il Denso from Acetaia Mussini owes its name to its consistency, as "il denso" means "the dense one." With a density of 1.35, it flows almost as thick as a *tradizionale*, dark and glossy. A high proportion of grape must and long aging in wood give it its depth. Just a few drops reveal what it is capable of.

Dense, fruity, and with a note of caramel

In the glass, Il Denso flows thick from the spoon, deep dark and shiny, leaving trails along the rim. It smells of ripe must, dark fruit, and a hint of caramel—a scent reminiscent of plum compote on aged wood.

A full-bodied must flavor follows: sweet and sour in beautiful balance, complex, with notes of caramel and a fine freshness. The acidity of six percent keeps it lively, and the dense texture lingers on the palate. Almost like a *tradizionale*, only more accessible.

Very beautiful, very fruity, very pleasant, top-tier

"Very beautiful, very fruity, very pleasant, top-tier" was the verdict of the jury from the gourmet magazine *Der Feinschmecker*, which awarded Il Denso second place in their 2021 balsamic competition. For the test, the experts tasted fifty balsamic vinegars from Modena, purchased in Italian supermarkets and delicatessens. "A high-caliber balsamic from the Mussini family in Magreta near Modena," the testers continued, "the proprietary 5-medal seal of quality signifies the highest standard in balsamic."

The reason for the depth: Il Denso contains a portion of vinegar aged for ten years in oak barrels. You can taste it. Steamed or grilled fish pairs just as well with it as salads, vegetables, and potatoes—and for everyday use, there is the dark Emozione Classico.

With porcini ravioli and risotto ai funghi

Its earthy depth loves mushrooms; a few drops of Il Denso over stuffed porcini ravioli or a risotto ai funghi demonstrate this immediately. It also shows its two sides over aged Parmesan or a handful of fresh strawberries. It should be added drop by drop, never by the liter—that way, its complex sweetness comes into its own most beautifully, and a bottle will last you a long time.

Acetaia Mussini in Magreta near Modena is run by cousins Giorgio and Gabriele. The family has been reducing grape must into balsamic since 1909; the two re-founded the current manufacture in 2001 and oversee around 15,000 barrels. In the battery, the must moves through barrels of ever-decreasing size over the years, slowly evaporating and becoming denser with each transfer. Good Aceto Balsamico di Modena simply takes time.

Never heat, otherwise the density is lost

Use sparingly and raw: never heat Il Denso; instead, drizzle it over the finished dish at the very last moment so that its aroma and syrupy density are fully preserved. Those looking for its dense sibling in a gift box can find it in the Aldo Mussini 5 Medaillen. More from this producer can be found under Acetaia Mussini.
