The Ortiz Bonito del Norte, tuna in olive oil, is considered a delicacy far beyond the borders of Spain. The white tuna is caught in the Bay of Biscay and immediately afterwards filleted and cooked by hand, then carefully placed in cans and preserved covered with olive oil. The flesh of the Bonito del Norte, the white tuna, is particularly tasty and very popular due to its very tender texture and light color. Conservas Ortiz – sustainable fishing

Conservas Ortiz has been successful in fishing and producing canned fish for over 100 years. Sustainable fishing is a fundamental principle of their work, because the sea is the source of their livelihood and that of future generations. At Conservas Ortiz, they understand the regeneration time that must be given to the different fish species in the sea. For example, tuna is not caught with nets, but traditionally, as Cantabrian fishermen have always done throughout history, with fishing rods. When fishing begins, the fishermen line up on one side of the boat. The fishing rods have a short line and the hooks are already baited with live bait. Sardines, on the other hand, are caught with a large rectangular net, called a "Cerco" (fence). This completely encloses an entire school of small sardines and catches them in one go.
