Ortiz – Sardines in Olive Oil

Ortiz Sardines in Olive Oil are considered a delicacy far beyond Spain's borders because they are particularly flavorful. The sardines, of the Sardina Pilchardus variety, are freshly and traditionally prepared. Each sardine is cleaned by hand and fried in virgin olive oil. Then they are carefully placed in cans and covered with olive oil.

Canned sardines, like Bonito del Norte, improve in taste over the years. The maturation period makes them softer and more delicate.

Conservas Ortiz – Sustainable Fishing

Conservas Ortiz has been successfully fishing and producing canned fish for over 100 years. Sustainable fishing is a fundamental principle of their work, as the sea is the source of their livelihood and that of future generations. Conservas Ortiz understands the regeneration time required by different fish species, which must be given to the sea. For example, tuna is not caught with nets but traditionally, as Cantabrian fishermen have always done throughout history, with fishing rods. When fishing begins, fishermen line up on one side of the boat. The fishing rods have a short line, and the hooks are already baited with live bait. Sardines, on the other hand, are caught with a large rectangular net, known as a Cerco (fence). This completely encircles an entire shoal of small sardines and catches them all at once.
