In the glass, it shimmers light and clear, with delicate pink reflections. On the nose, it tingles with red fruit aromas of cassis and blueberry—fresh, spicy, and inviting.
On the palate, the Blanc de Noir is juicy, spicy, and mineral, with fine pressure and a beautiful balance between fruit sweetness and fruit acidity. With 3.9 g/l of residual sugar and 7.2 g/l of acidity, it remains dry and clear without ever seeming harsh.
That is the art of Blanc de Noir: it carries the spice of a red variety but comes across as light-footed as a good white wine. A wine that is fun but still has a story to tell.
With delicate fish and roasted poultry
The Blanc de Noir loves light cuisine: delicate fish, roasted poultry, white meat, and refined vegetable dishes. For a vegetarian spread, it is a reliable companion that never pushes itself into the foreground.
Served well-chilled at 9 to 11 degrees in a bulbous white wine glass, it pairs beautifully with pan-fried zander or chicken with herbs. Gently pressed around Laumersheim
The Pinot Noir grapes for the Philipp Kuhn Blanc de Noir grow in the vineyards around Laumersheim, Dirmstein, and Großkarlbach on limestone and loess-loam soils. Philipp has them harvested exclusively by hand at the right time and brought to the winery in small crates.
Because the red color pigments are only in the berry skin and not in the pulp, the grapes are pressed particularly gently, resulting in an almost white juice. The gentler the pressing, the clearer the fruit remains in the glass. The must ferments spontaneously, cool and temperature-controlled in stainless steel tanks, which keeps the minerality of the limestone sites vibrant.
"It must be dry," is Philipp's rule for all his wines, and you can taste that here too. He bottled his first vintage in 1992; today, the winery manages around 40 hectares and has been a member of the VDP since 2008.
