Cherry, cassis, a hint of smoke
In the glass, the Incognito appears dark red and dense. Cherries and cassis scent the nose, accompanied by a fine hint of smoke.
On the palate, it is fruity, spicy, and velvety, with fine tannins and enough acidity to keep it lively. At 13.5% vol and only 0.7 g/l residual sugar, it is dry and balanced. An international red wine that is fun to drink yet has something to say.

Its place is by the grill
The Incognito loves hearty, savory cuisine. Dark grilled meat, tomato-based sauces, pizza, and pasta are its favorite companions.
At 16 to 18 degrees Celsius, it pairs perfectly with grilled lamb, hearty pasta, or a piece of dark chocolate from Venezuela. Its soft tannins go well with almost any bite, even an evening snack. Fifteen months in barriques
Only the production method is known: the hand-picked, yield-reduced grapes undergo classic mash fermentation. The young wine then matures for 15 months in used French oak barriques.
These used barrels provide a fine spice without overpowering the wine with loud oak notes. This keeps the fruit in the foreground, with the wood providing only the background to give the blend its elegant structure. Of the six grape varieties, only Merlot (at around 30 percent) and Dornfelder are definitely known; the rest remains Incognito.
This highlights Philipp's talent for red grape varieties. It is not for nothing that he has won the German Red Wine Prize several times. At 16 to 18 degrees, the Incognito shows its full spice, and an hour in the glass does it good. It tastes great freshly opened, but on the second day, it often shows even more depth.
