Porthos Sardines in Teriyaki Sauce are whole Portuguese sardines in a savory-sweet soy-based sauce, in Portuguese "Sardinhas em molho teriyaki." Not a classic oil-packed fish, but a modern idea from an old cannery.

Sardines in Teriyaki Sauce are the adventurous variation from the house of Porthos: whole Portuguese sardines, hand-selected and placed in a savory-sweet teriyaki sauce with a soy sauce base. Aromatic, firm to the bite, and with that dark, salty-sweet depth familiar from Japanese cuisine. Portugal and Japan on a single spoon.

Savory, salty, and slightly sweet

The teriyaki sauce brings soy sauce, sweetness, and a fine spice, and beneath it lies the sardine, firm and aromatic. A fish that suddenly tastes of the Far East. Teriyaki originates from Japan, where fish is often cooked in a glossy soy sauce glaze, and Porthos has simply brought the idea into the can.

First the sweetness, then the saltiness of the soy sauce, then the fish – the three pass the ball back and forth without one dominating. The better the sardine, the more it carries the bold sauce without being overwhelmed. Anyone who thinks canned fish can only be oil and tomato will be proven wrong here.

And because the sardine remains whole and firm, it does not fall apart in the sauce. You fish out proper fillets, not crumbs, just as a good preserve should be.

With rice, sesame, and spring onion

A bowl of warm rice with a few sesame seeds and some spring onion is the stage for the sardines in teriyaki sauce. They pair wonderfully with anything that can handle a bit of the Far East. A warm fried egg on top, and a quick lunch is complete.

They are equally effective in a quick bowl with avocado and cucumber, and are a joy to eat plain on bread. They like Asian neighbors: pickled ginger, a little soy sauce, toasted nuts. An old musketeer tries something new

Porthos is one of Portugal's most traditional fish brands, based in Matosinhos near Porto, where the Conservas Portugal Norte cannery packs Atlantic fish by hand into cans. Its roots stretch back to 1912.

The brand is named after the musketeer Porthos from Alexandre Dumas' 1844 novel, the strongest of the three friends as Dumas envisioned him.
