Rübbelberg Egg Liqueur as organic egg liqueur without cream
Rübbelberg Egg Liqueur is an organic egg liqueur from Berlin-Kreuzberg, offered here in a small 200 ml bottle. Instead of cream, the base is made from organic egg yolk, Bourbon vanilla, and mild organic grain spirit, which makes it lighter than the typical versions found on store shelves.
Rübbelberg Organic Egg Liqueur comes from the Berlin-based company Rübbelberg UG, and this 200 ml size is just right if you are looking for a small gift or want to try it for the first time. The slender bottle fits into any bag and stores easily in the refrigerator door.
Egg yolk, vanilla, and not a gram of cream
Without cream, egg liqueur tastes different—namely, more clearly of egg and vanilla, because there is no milk fat to mask the flavors.
That is exactly what the recipe is aimed at: organic egg yolk provides color and consistency, Bourbon vanilla from Madagascar adds sweetness, and a splash of lime keeps everything vibrant. This gives the liqueur a fragrant, velvety, and light quality, rather than feeling heavy in the glass. Because it lacks milk and cream, it is also lactose-free, which is far from a given for egg liqueur.
Many manufacturers use cream because it simulates richness and is cheaper than egg yolk, but it coats the flavor like a veil. At 15% vol, this liqueur is one to enjoy occasionally—not a digestif that forces itself to the forefront. If the egg yolk settles after weeks in the cupboard, a vigorous shake is all it takes to make the bottle as good as new.
The small bottle for gifting
For a small gift, the 200 ml bottle is the perfect size because it offers more than a sample while still being a low-pressure present.
In practice, it finds its way into gift baskets, onto the table at Easter brunch, or serves as a thank-you after a nice dinner. Paired with a piece of braided yeast bread or waffles, it makes for a spontaneous dessert; it is also perfect in cake batter, in a mousse, or over a scoop of vanilla ice cream. You can find more ideas for gifts in our Easter selection, where egg liqueur has always held a firm place.
Incidentally, you don't have to keep it refrigerated; the alcohol keeps it stable even after opening, though it does taste rounder when chilled. Those who want to keep the liqueur on hand for everyday enjoyment should opt for the large bottle. Both sizes and the two varieties with nut and chocolate are available side-by-side in the Rübbelberg assortment.
Kreuzberg recipe with ingredients from two regions
The production takes place in Berlin-Kreuzberg, where Rübbelberg UG is based.
The organic eggs come from farms in Northern Germany, the organic grain spirit is distilled in a Black Forest family distillery, and each large bottle contains almost a whole vanilla bean.
The whole thing started in 2017 as an experiment in Berlin apartments, as Rübbelberg describes its early days, and Philipp Nagel and his two co-founders stood at the stove themselves. Since then, the recipe has been refined rather than fundamentally changed.
