The producers consciously avoid using cream or milk, which is why it flows smoothly from the bottle rather than pouring thick like pudding.
Rübbelberg Egg Liqueur is the organic premium egg liqueur from Berlin-based Rübbelberg UG, presented here in a 500 ml bottle for those who like to keep it in their cupboard well beyond Easter. Each large bottle contains nearly a whole pod of organic Bourbon vanilla from Madagascar, which defines its flavor profile.
Vanilla, lime, and egg yolk
The liqueur flows smoothly rather than being pudding-thick; it has a deep taste of Bourbon vanilla, and a splash of lime gives it a bright, almost sunny edge.
Carried by the vanilla, it remains creamy, velvety, and fresh without ever becoming sticky. Conventional egg liqueur usually uses cream, which makes it heavy and rich. Here, the egg yolk remains discernible, and the vanilla is given the space it rarely receives elsewhere.
At 15% ABV, Rübbelberg Egg Liqueur is mild enough for the afternoon and strong enough to hold its own alongside an espresso. After sitting for a while, the egg yolk may separate slightly from the grain spirit; a quick shake brings everything back together. This is not cloudiness, but simply a sign that no binding agents are involved.
Neat, on ice, or in coffee
Served cold from the fridge, it’s a quick nightcap; poured over vanilla ice cream, it becomes a sauce; and in hot coffee, it serves as a quick dessert after Sunday roast. It brings joy when guests arrive in the afternoon and there’s already cake on the table.
Classically, it can be added to batter to keep cake moist; it also elevates a mousse or a quick zabaione. Paired with Cantuccini by Antonio Mattei, it makes for a simple dessert, and a piece of dark chocolate on the side never hurts.
You don't need to refrigerate it, as the alcohol preserves it even after opening. However, it tastes rounder when chilled, so the fridge is a good place for the bottle. The 500 ml is enough for a cake gathering and will still last quite a while afterward.
Three friends and a market hall in Kreuzberg
The idea was born in Berlin kitchens in 2017, because no store-bought egg liqueur could compare to the homemade versions of the past.
Christopher Leidinger, Philipp Nagel, and Sebastian Tigges brought their liqueur to their own stall at Markthalle Neun in Kreuzberg in 2018. The organic eggs come from farms in Northern Germany, and the organic grain spirit comes from a family distillery in the Black Forest. "We wanted less pudding and more of an elegant liqueur," is how the producers sum up their own standard.
