The Raspberry Shrub syrup from Schusters Shrub is a vinegar-based fruit syrup made from aromatic raspberries. Combined with sparkling water, it makes for a zesty raspberry lemonade; with sparkling wine, it becomes a fruity aperitif. An absolute classic, awarded with gold.

Raspberry Shrub syrup is the fruity, vinegar-based syrup from the Schusters Shrub workshop in the Steigerwald. Aromatic raspberries and naturally cloudy apple cider vinegar set the tone, with nothing added but sugar—real fruit needs nothing more. Raspberry shrub has been enjoyed this way for 200 years, and the gourmet magazine Selection has awarded it a gold medal.

Juicy raspberry, fresh acidity, summery

On the nose, ripe raspberry blossoms—fruity and clear. The scent alone makes you crave a cool sip on a hot day in the garden.

On the palate, this transforms into a dense raspberry aroma, carried by the lively acidity of apple cider vinegar. Juicy, fruity, and zesty, the syrup stands out in the glass without ever feeling too sweet. The flavor comes 100 percent from the fruit, as Hanna consciously avoids artificial flavorings.

The finish leaves a fine, berry-like acidity that quenches thirst. There are around 60g of sugar and 0.004g of salt per 100ml, with the fruit clearly taking center stage.

As raspberry lemonade and as an aperitif

Mixed in a 1:12 ratio with ice-cold sparkling water, the shrub becomes a lemonade; a splash of sparkling wine or Prosecco turns it into a fruity aperitif.

It is also a delight in salads. A spoonful over lamb's lettuce with some good oil, and the dressing tastes like summer. It is also perfect for a raspberry punch when guests arrive and the glass needs to be a bit larger. Fruity, berry-forward, and lively, it adds a kick to any glass.

It is a fine companion for desserts, as a drizzle over panna cotta, in cake cream, or over vanilla ice cream. The 250ml bottle is enough for many glasses and salads, as even a small splash brings rich fruitiness into play.

Children also love the raspberry lemonade, completely alcohol-free and without artificial flavors. For a summery punch, mix the shrub with cold fruit tea and a few fresh berries. A single bottle quickly turns into an entire afternoon of refreshment, and the raspberry flavor is reminiscent of summer in the garden.

Hanna processes raspberries in her workshop

In her small workshop in the Steigerwald, Hanna Schuster steeps aromatic raspberries in naturally cloudy apple cider vinegar for months until their aroma transfers naturally into the vinegar.

Afterward, the fruits are pressed, the fruit vinegar is sweetened with sugar, and it is bottled hot. This is how fruit has been preserved for over 200 years, and without preservatives, the 250ml bottle stays fresh for about three years. "In a shrub, the fruit should set the tone," emphasizes Hanna, and that is exactly what you taste.

Once opened, the syrup does not need to be refrigerated; it should only be kept in a dark place to maintain its beautiful red color. The gourmet magazine Selection has awarded this classic a gold medal—a fine reward for honest fruit. For those who like it sparkling, pour it with sparkling wine as an aperitif.
