Tonic Water from the Eifel for Gin and Tonic
Windspiel Tonic Water is the in-house filler made from natural Eifel mineral water, packaged in a blue can. Lime, bergamot, and lemongrass are at the forefront, with quinine subtly in the background. Not a sugary bitter soda, but a refined, citrusy tonic for your gin and tonic.
Tonic Water is the signature filler from Windspiel Manufaktur, bottled in slim 200ml blue cans featuring the greyhound logo. Based on natural mineral water from the Eifel region, the citrus notes are clearly in the foreground, while the quinine remains subtle. Crafted to showcase the Windspiel Gin perfectly in a gin and tonic.
Lime, bergamot, lemongrass
The carbonation is finely integrated, and the citrus note takes center stage, featuring lime, bergamot, and lemongrass.
The quinine remains subtle in the background, which is why the tonic tastes fresh rather than intrusively bitter. Crisp, citrusy, and zesty, it lets the gin take the lead instead of overpowering it. This is exactly what makes a good tonic.
A tonic that is too sweet or too bitter quickly masks the delicate botanicals of a gin. This one remains pleasantly restrained and brings primarily freshness to the glass. If you have ever had a tonic that was too syrupy, you will immediately appreciate the difference. Here, you decide how much bitterness you want in your glass; the tonic does not force it upon you.
The perfect Gin and Tonic
Poured over Windspiel Dry Gin, the tonic water fulfills its purpose, served over plenty of ice with a lemon twist.
40 ml of gin to 100 ml of tonic, a few ice cubes, and a slice of lemon—the classic is ready. It pairs just as well with the Windspiel Dry Gin (47% ABV) as it does with the fruity Pink Grapefruit Gin, where a slice of grapefruit makes the perfect garnish. It’s also a refreshing drink on its own for in-between times, even if you don't have any gin at home.
The slim blue can with the greyhound logo fits into any cooler bag, making this tonic a practical companion for when you're on the go. It is available individually and in a 24-pack to keep you stocked up. This way, you will always have the right filler ready for the next mild evening on the balcony.
Mineral water from the Volcanic Eifel
Behind the tonic is the Windspiel Manufaktur, known for Germany's first gin made from potatoes grown in volcanic soil.
Sandra Wimmeler and Denis Lönnendonker founded their distillery in 2014 in the Volcanic Eifel. Because a good gin deserves a good filler, they launched their own tonic—loyal to the region, using mineral water from the Eifel.
The name "Windspiel" dates back to Frederick the Great and his beloved greyhounds, which is why a greyhound adorns the blue can. You can find the entire range from Windspiel Manufaktur with us, from gin to non-alcoholic options. Here is how to make the perfect gin and tonic.
First the ice, then the gin, lastly the tonic
The tonic tastes best well-chilled; use 40 ml of gin to 100 ml of tonic with plenty of ice and a lemon or lime twist. Add the ice first, then the gin, and finally pour the tonic slowly down the side of the glass so the carbonation remains nice and fine. It also tastes great on its own without gin as a refined, citrusy summer refreshment. With a sprig of rosemary and a slice of lime, you have a beautiful drink in your glass even without alcohol.
