Wildflower honey from Sicily is a summer honey made from a variety of wild blossoms – thyme, fennel, clover, and whatever is in bloom around Trapani. Amber-gold and aromatic, with more character than a light single-varietal honey, and slightly different with every harvest.

Wildflower honey from Sicily is a polyfloral honey for which bees collect nectar from many of the island's wild blossoms rather than just a single variety. In Italian, it is called Miele di Millefiori siciliano, or "thousand-flower honey." Golden in color and full-bodied in aroma, both spicy and floral, it brings the scent of an entire Sicilian meadow into the jar.

Amber-gold and full of meadow aromas

The wildflower honey shimmers amber-gold and delivers a full, spicy aroma that smells of warm herbs and summer blossoms. The color ranges from light amber to deep golden brown, depending on which blossoms were dominant.

The fragrance blends flowers and herbs, a hint of fennel and thyme, and a warm, malty sweetness. On the palate, it is full-bodied and long-lasting, significantly more robust than a mild spring honey, but without becoming bitter. Because the bees forage freely, every batch tastes slightly different – sometimes more floral, sometimes spicier, depending on what was in bloom. A honey with a personality of its own, retelling a piece of Sicily every summer.

For strong cheese and dressings

Its fuller aroma holds its own even alongside intense partners, where a delicate honey would be lost.

The wildflower honey shines on dark bread or whole grain, and it provides a sweet counterpoint to an aged Pecorino or blue cheese. In dressings with mustard and vinegar, it adds depth; drizzled over roasted vegetables or used in a marinade for chicken, it provides a spicy sweetness. And in a robust black tea, it dissolves into a rounded, warm beverage.

For breakfast, it pairs well on hearty bread with butter or in porridge, and over yogurt with nuts, it makes breakfast a bit more savory. It handles heat well when baking, giving gingerbread or honey cakes a dark, aromatic sweetness.

Freely foraged in the hinterland of Trapani

Around Trapani, between hills, maquis, and old fields, a colorful variety of wild plants blooms from spring into summer. Thyme and wild fennel, clover, thistle, and the last of the citrus blossoms – all of this can be found, depending on the year, in a single flower honey, quite unlike a pure varietal honey from a single nectar source. It is a honey that captures an entire landscape and season, not just one blossom.

It is collected under the umbrella of Antica Bottega Siciliana. Salvatore Novara, who runs the brand in Trapani, works with small beekeepers and producers on the island who practice their craft in the traditional way, without industrial shortcuts.

It tastes different from harvest to harvest

Wildflower honey also crystallizes over time – simply stir it until creamy or place the jar briefly in a warm water bath, at most 40 degrees Celsius, so the aromas remain. Because its taste changes from harvest to harvest, it is worth comparing directly – a spoonful on its own reveals what this batch from Sicily has brought with it. Kept cool, dry, and well-sealed, it stays fresh for a long time.
