Sicilian lemon marmalade is a tart and fresh fruit spread made from the pulp and peel of sun-ripened Sicilian lemons. Zesty, lemony, with a delicate bitterness – not a sugary jelly, but a marmalade that tastes of the sun and the south.

Sicilian lemon marmalade is a fruit spread made from sun-ripened Sicilian lemons, consisting of pulp and finely sliced peel, cooked down with sugar. In Italian, it is called marmellata di limoni. Pale golden yellow, thick and chunky, it tastes zesty and lemony, with a balanced sweet-and-sour flavor and the tart freshness of the peel.

Zesty, lemony, with tart peel

Upon opening the jar, you are met with the bright, clear scent of fresh lemons, clean and crisp.

The marmalade is thick and chunky, streaked with fine strips of lemon peel, with a pale golden yellow color. On the spoon, the acidity hits first, bright and clear, then the sweetness that catches it, and finally the tart bitterness of the peel. Unlike a mild orange marmalade, it retains a sharp edge; nothing about it is rounded off or heavy, possessing that typical Sicilian lemon freshness known from limoncello or granita.

On bread, in cake, with fish

Its acidity makes lemon marmalade more versatile than a sweet marmalade, suitable for both sweet and savory dishes.

On buttered bread or scones, it brings freshness to the breakfast table, and stirred over pancakes or into plain yogurt, it makes for a bright, zesty start to the day. In baking, it truly shines – as a filling for lemon tarts, in batter, or as a glaze on a lemon or almond cake.

Savory-wise, the lemon marmalade goes well with fried fish or chicken; a spoonful added to the pan sauce with a bit of butter gives the dish a bright, lemony depth. It provides a fresh, tart contrast to mild cream cheese or goat cheese.

From the island’s lemon groves

The lemons for the marmalade come from the groves of Sicily, where the lemon has been at home for centuries.

Sicily and the lemon belong together like almost nothing else – from the terraces of the east coast to Syracuse, where lemons bear fruit almost all year round. The lemons of Syracuse are so famous that they even carry their own seal of quality. Goethe once sang of the land where the lemon trees bloom, referring to the south. The sun makes the fruits aromatic and the peel thin and oily, full of essential oils that give the marmalade its clear scent – the peel is just as important here as the pulp.

It is cooked and jarred under the roof of Antica Bottega Siciliana in Trapani. What Salvatore Novara gathers there comes from small producers on the island who still use traditional methods, cooking in small batches and with patience.

In tea instead of a lemon slice

Once opened, the lemon marmalade will stay fresh in the refrigerator for several weeks if removed with a clean spoon. Its acidity makes it a quick kitchen helper: a teaspoon in a salad dressing, in tea instead of a lemon slice, or in water with ice as an improvised lemonade. And for those who bake, it can replace a portion of the sugar and lemon zest in the dough. Stored in a cool, dark place, the aroma is preserved for a long time.
