Bordier Churned Butter with Lemon for Fish and Vegetables

Bordier Churned Butter with Lemon is a lemon butter from Brittany, into which lemon olive oil is kneaded. The oil comes from lemons pressed together with olives, bringing fruit and cream together.

Churned Butter with Lemon is the only lemon butter from Le Beurre Bordier in which butter and olive oil work together. 6 percent lemon olive oil gives it a bright freshness, and with only 1 percent salt, it is the mildest of the seasoned varieties.

Lemon olive oil in light cream

The color is a shade lighter than the other varieties, and you can smell the lemon as soon as you unwrap it.

On bread, it tastes of cream and lemon, with the grassy olive oil carrying the fruit. With only 1 percent salt, this lemon butter remains fresh, creamy, and delicate. On warm fish, it melts in seconds and turns into a sauce.

On fish, under vegetables

Wherever you would otherwise add a squeeze of lemon, this butter can be used instead.

On steamed fish, it melts into an instant sauce; over green asparagus and young beans, it replaces oil and acidity in one step. Mussels, shrimp, and a tin of Breton sardines also go well with it.

In pasta, it becomes the fastest sauce ever: a piece in the hot noodles, a little pasta water, and it’s done. If you are looking for the taste of the sea, try the butter with seaweed, which comes from the same coast.

Because it contains so little salt, this variety also pairs well with sweet flavors. On a warm croissant or under honey, the lemon remains bright and does not overpower. After about 15 minutes out of the refrigerator, it can be spread in thin ribbons.

Why oil is added to the butter

The lemon is present as oil in this butter, and there is a good reason for that.

For this oil, whole lemons are pressed together with the olives so that the olive oil directly absorbs the citrus scent. This keeps the aroma bright and rounded, whereas the raw fruit would turn bitter in the butter. It is then incorporated into the hand-kneaded butter until the oil and cream form a single mass.

The oil content also makes the butter more pliable than its siblings, so it can be spread sooner. With 81 grams of fat per 100 grams, it is still within the normal range because the oil and butterfat do not add up, but replace each other. If you are looking for the unseasoned base, you can find it among the French butter varieties, and the 125g portion comes to you as a hand-shaped piece.

There is only one thing you should keep in mind: lemon and heat do not mix well, which is why this variety should be added at the end of cooking, not the beginning. When in doubt, add the piece to the plate only when it is already in front of you; that way, the fruitiness remains fresh.

The butter is quite soft, even when shipped chilled. Sometimes the paper it is wrapped in may become damp. Bordier is aware of this, and the packaging has been intentionally left unchanged.

Maison Bordier in der Bretagne knetet Butter noch von Hand. Jean-Yves Bordier, Sohn einer Käse- und Butterfamilie, übernahm 1985 in Saint-Malo die Molkerei La Maison du Beurre von 1927 und holte das alte Verfahren zurück. 2003 zeichnete ihn der Guide Champérard als besten Genusshandwerker Frankreichs aus. Seit 2023 führt das Haus seinen Namen als Maison Bordier weiter.
