Organic Linden Honey from the Colbitz-Letzlinger Heide – creamy & minty

The organic linden honey from Die Honigwanderer comes from one of the largest linden forests in Europe, the Colbitz-Letzlinger Heide in Saxony-Anhalt. Creamy, aromatic, delicate in scent, fruity in taste, with a minty finish. Not a loud varietal honey – a quiet, clear organic blossom honey with character.

Organic linden honey is a creamy, delicately aromatic varietal honey made from the nectar of summer and winter linden trees, harvested in mid-May by a partner organic apiary of Die Honigwanderer in the Colbitz-Letzlinger Heide. The bee colonies are located at coordinates N52° 19' 54.566" E11° 33' 25.315" – in the middle of one of the largest contiguous linden forests in Europe, covering over 23,000 hectares in the north of Saxony-Anhalt.

Delicate in scent, fruity, slightly minty

Upon opening, a floral fragrance unfolds with green notes and a fine hint of linden; the taste is followed by a fruity sweetness with a minty finish. This is the hallmark of a good organic linden honey: not intrusive, not perfumed, but clear with a slight herbal note at the back. You can recognize it by the minty tone created by the linalool in the linden nectar.

The honey is creamed, even in consistency, light brown to golden yellow in the jar. Anyone who loves linden honey knows this minty touch at the end – it gives the varietal honey its strong character. With a relatively low glucose content, linden honey crystallizes relatively quickly; this is a quality feature of an untreated, single-varietal organic honey – no additives, no flavorings.

A fine companion for hard cheese and tea

On a slice of aged mountain cheese or with a savory piece of Parmigiano, the organic linden honey makes a strong impression because the fruity sweetness plays against the saltiness of the cheese. It also dissolves beautifully in hot herbal tea and adds a gentle depth – one teaspoon per cup is enough. Quiet Sundays are its time.

In a salad dressing with apple cider vinegar and walnut oil, the linden honey complements the nutty notes. A slice of good sourdough bread with butter and a spoonful of linden honey – that's all you need. A classic for a quiet Sunday breakfast, your day starts differently with it.

70 bee colonies on the move in early summer

In mid-May, the linden tree blooms for only about two to three weeks. For this, the partner apiary moves its bee colonies to Saxony-Anhalt during the cool night so that the animals can swarm out again early in the morning. This keeps stress for the bees low, but the yield high, because the linden tree produces a lot of nectar in a short time, as Simon describes the concept in discussions about the assortment.

Behind the brand Die Honigwanderer are Stefanie and Simon Weber, who have curated a network of around 70 bee colonies with organic partner apiaries throughout Germany since 2024. Each partner beekeeper works according to strict EU organic guidelines; the honey is extracted gently, not heated, and bottled without further ingredients. If you are interested in this migratory logic, take a look at the other organic honeys from Die Honigwanderer; each of the six varietal honeys stands for its foraging area and its own character.

The tea must not overheat it

In a dark cupboard at 10 to 18 degrees, organic linden honey stays in shape. It dissolves best in tea when the water is no hotter than 40 degrees; otherwise, the delicate linden notes and the natural enzyme structure are lost. On a cheese board directly from the jar, a scant teaspoon per piece, accompanied by a slice of pear. You will discover why linden honey deserves a place alongside the great varietal honeys – and you'll usually find your favorite combination after three or four tastings.
