The Il Borgo Yellow Balsamic Vinegar is the young condiment from the Acetaia Il Borgo del Balsamico in Albinea. The yellow label represents the fresh, everyday level of the condiment line: bright, lively, and made for salads and quick sauces.

Il Borgo Yellow Balsamic Vinegar is a young, fresh condiment made from cooked grape must and wine vinegar, produced by sisters Cristina and Silvia Crotti in Albinea. Unlike Aceto Balsamico di Modena IGP, which must contain at least 6% acidity, the condiment is not tied to that seal and has lower acidity; instead, it is light, lively, and made to be reached for daily right alongside the salad oil. The yellow label is the freshest of the 3 aging stages.

Light, lively, and fruity-fresh

In the glass, the Yellow variety glows with a bright, amber color; it is thinner than the aged stages, with a scent of fresh grapes.

On the palate, it is lively, clear, and uncomplicated, with fruit leading the way while the sweetness of the young must remains subtly in the background. A condiment that aims not for depth, but for freshness—exactly what a good salad dressing needs. Instead of long barrel aging, what counts here is its animating character, which makes even a simple leafy salad come alive without ever becoming overpowering.

For salads, dressings, and quick sauces

Il Borgo Yellow Balsamic Vinegar belongs on salad, in dressings, and for quickly seasoning sauces.

Whisk it with a good olive oil, a little mustard, and salt to create a vinaigrette that loves crisp leaf salads and roasted vegetables. A tomato salad with basil takes it well, as does grilled zucchini, and lentil soup especially benefits from that splash of acidity. From the handy 250 ml bottle, you can pour it generously, as a hearty splash is definitely encouraged here.

For fine dining, with aged cheese, or for dessert, it is better to reach for the aged orange or red condiment, which are denser and sweeter. The Yellow variety, however, is the uncomplicated everyday hero that you can use generously without hesitation.

The Crotti family and their condiments

Il Borgo del Balsamico is the acetaia of sisters Cristina and Silvia Crotti in Albinea, in the green hills of Reggio Emilia.

Before vinegar became their passion, the family ran the fashion house Maska for over 30 years, until the sisters sold it around the year 2000. The Crotti family has now been producing balsamic vinegar for over 40 years: as early as the 1970s, their father began buying up old barrels from families who were giving up the tradition. Their condiments are created from the cooked must of local grapes and a small portion of aged wine vinegar, ranging from light and fresh to dark and dense depending on the recipe and aging.

In addition to the condiments, the acetaia bottles certified Aceto Balsamico di Modena IGP and, from over 950 old barrels in the attic, the rare Aceto Balsamico Tradizionale di Reggio Emilia DOP. All are produced entirely without caramel coloring, without preservatives, and are gluten-free.

With the condiment, as with the aceto, you can recognize the maturity by the label color: Yellow stands for fresh everyday use, Orange for the aged middle stage, and Red for the top tier. You can find the entire series from the acetaia and many other balsamic vinegars here with us.
