Il Tinello Red Wine Vinegar "Il Rosso" is a naturally fermented red wine vinegar from the Acetaia Il Borgo del Balsamico in Albinea. Made from dark Italian grapes, raspberry-red and clear, it adds a bold, fruity acidity to meat, fish, and vinaigrettes.

Il Tinello Red Wine Vinegar, known as "Il Rosso" at Il Borgo, is a red wine vinegar naturally fermented from dark Italian grapes, produced by sisters Cristina and Silvia Crotti in Albinea. Aged in small wooden barrels, it features a clear, raspberry-red color and provides the acidity of a true wine vinegar with at least 6% acidity. It remains thin and clear, not thick like a balsamic.

In the glass, Il Rosso glows raspberry-red and clear, with aromas of ripe dark grapes and a subtle wine note on the nose.

On the palate, it is bold and lively, with clear fruit and a wine-like character. Unlike a balsamic, it remains thin—maturation in small barrels rounds it out without making it thick. This brings excitement and freshness to a dish, where a sweet vinegar would be too soft. It is precisely this clear strength that makes it a favorite for those who like a lively taste.

For vinaigrettes, meat, and fish

Il Tinello Red Wine Vinegar belongs in vinaigrettes, on meat and fish, and on both raw and cooked vegetables.

Important: Il Rosso does not tolerate heat, so do not add it to a boiling dish; instead, add it at the very end or use it in cold preparations. For us, it belongs in a robust salad vinaigrette, drizzled over a braised roast after cooking, or over grilled peppers. It provides the acidity needed for a good marinade for meat and fish. Its clear character also pairs excellently with lentils, white beans, or a hearty winter salad.

The 250 ml bottle goes a long way, as a splash is enough to give a dish contour. Those who prefer something lighter and fruitier can choose the White Wine Vinegar Il Bianco; for sweet reductions, stick with the Balsamic vinegars. The red wine vinegar, however, is the bold, clear component in your vinegar collection.

Wine vinegar from the home of the Balsamic sisters

Il Borgo del Balsamico is the acetaia of sisters Cristina and Silvia Crotti in Albinea, in the green hills of Reggio Emilia.

The family is famous for their balsamic vinegar, but the art of vinegar making also includes classic wine vinegar. They have been working with grapes and barrels for over 40 years; before vinegar became their passion, the family ran the fashion house Maska for over 30 years, until the sisters sold it around the year 2000.

Il Rosso is naturally fermented from dark grapes and then matured in small wooden barrels, which gives it roundness and aroma. Like all vinegars from the acetaia, it is produced without any caramel color or preservatives. Stored in a cool, dark place, it keeps for a long time and remains as lively as it was when bottled.
