Il Tinello White Wine Vinegar, known as Il Bianco at Il Borgo, is a white wine vinegar made from Italian grapes by sisters Cristina and Silvia Crotti in Albinea. Aged in small wooden barrels, it features a clear, light-yellow color and, with at least 6% acidity, delivers the sharpness of a true wine vinegar. It remains thin and clear, not thick like a balsamic.

Light yellow, clear, with fruity freshness

In the glass, Il Bianco shines light yellow and clear; on the nose, it offers notes of white grapes and a refined, vinous freshness.

On the palate, it is bold, clear, and lively, underscored by fruity aromatics. Unlike a balsamic, it remains thin—the wooden barrel rounds it out without making it sweet or heavy. This provides the acidic, aromatic kick that a dish sometimes needs to come alive. It is this exact clarity that makes it a reliable staple in any kitchen, giving you acidity and fruit in one, without the heaviness of a sweet vinegar.

Wine vinegar from the Crotti family

Il Borgo del Balsamico is the acetaia owned by sisters Cristina and Silvia Crotti in Albinea, nestled in the green hills of Reggio Emilia.

The family is famous for its balsamic, but a good wine vinegar is just as much a part of the art of vinegar making. The family has been working with grapes and barrels for over 40 years; before vinegar became their passion, they ran the fashion house Maska for over 30 years, until the sisters sold it around the year 2000.

Il Bianco is aged from Italian grapes in small wooden barrels, which give it a fine aroma in addition to its acidity. Like all vinegars from the acetaia, it is produced entirely without caramel coloring and without preservatives. Stored in a cool, dark place, it stays fresh and clear in the bottle for a long time.
