Il Tinello white balsamic, a condimento bianco, is made from concentrated white grape must and white wine vinegar, produced by sisters Cristina and Silvia Crotti in Albinea. Unlike Aceto Balsamico di Modena PGI, which must contain at least 6% acidity, the condimento contains less. Clear and light, sweet and sour all at once, the white balsamic has a pleasantly rounded profile thanks to the grape must.

Light, clear, sweet-and-sour and well-rounded

In the glass, the white balsamic is light and clear, almost like pale grape juice, with a fresh, fruity aroma.

On the palate, sweetness and acidity meet and balance each other out; the concentrated grape must gives it a rounded, pleasant quality. Unlike a dark balsamic, it remains light, so it does not discolor light-colored sauces and dishes. This way, you get that sweet-and-sour tang without darkening the plate—a fine advantage that chefs appreciate. A white balsamic is therefore the first choice when a light sauce or a delicate fish needs to retain its color.

For fish, vegetables and light sauces

The white balsamic tastes particularly good with fish, but vegetables and even desserts also benefit from its sweetness and acidity. Because it doesn't stain, it is a favorite for everything that needs to remain light on the plate.

A light dressing for leaf salad, steamed fennel, or grilled asparagus work perfectly with it, where a dark balsamic would be too heavy. On fried fish or seafood, it adds a fine, clear accent. And over strawberries with a little pepper, it becomes a surprising dessert that will leave your guests guessing. That is how versatile a white balsamic is: sometimes a light dressing, sometimes a subtle accent on fish, sometimes a surprising note in a dessert.

If you are looking for bold, dark sweetness, stick to the red balsamic vinegar or other balsamic vinegars; the white balsamic, however, is the bright, refined counterpart for light cuisine.

A light condimento from Albinea

Il Borgo del Balsamico is the acetaia of sisters Cristina and Silvia Crotti in Albinea, in the green hills of Reggio Emilia.

The family is known for its dark balsamic, but the art of the acetaia also includes the light condimento bianco. The family has been working with grape must and barrels for over 40 years; before vinegar became their passion, they ran the Maska fashion house for over 30 years until the sisters sold it around the year 2000.

This clear, sweet-and-sour condimento is produced in the acetaia from concentrated white grape must and white wine vinegar. Like all vinegars from the family, it is made without caramel coloring or preservatives, and the 250 ml bottle goes a long way, as just a small splash brings freshness to a dish.

In addition to white balsamic, Il Borgo del Balsamico produces dark Aceto Balsamico, wine vinegar, and apple cider vinegar. You can find the entire range from the acetaia and the fresh white wine vinegar with us, from light and airy to dark and dense.
