Mackerel Mousse with Onions is a spreadable pâté from Conserverie Jean de Luz in the French Basque Country. The mackerel is caught along the Atlantic coast, cleaned by hand, and cooked separately before being stirred into a mousse with organic onions and a pinch of Piment d'Espelette.

Spreadable, sweet, and with a subtle warmth

The terrine de maquereau is dense and velvety, and you can immediately recognize the robust character of the Atlantic fish in it.

The onion provides a mild sweetness underneath, which balances the savory tone and rounds it out. Above this lies the warmth of the Piment d'Espelette—fruity and smoky—which only truly unfolds after swallowing. Straight from the fridge, the mousse is firm and sliceable; at room temperature, it becomes soft enough for thin bread. On hearty country bread, it holds its own against the sourdough without losing any of the mackerel's flavor.

A spoonful on warm toast for an apéro

This spread works best on toasted bread, as the warmth of the toast makes it smooth and supple.

Add a few cornichons on the side, some thinly sliced radishes on top, pour a cool glass of white wine, and the evening has begun. The mousse also works perfectly as a stuffing for deviled eggs or as a dollop on a hot baked potato. If you want to continue the apéro, place the Sardine Mousse with Garlic next to it.

The mackerel, a fish with a mind of its own

Mackerel travel in large schools through the Atlantic and are among the oiliest fish caught there.

It is precisely this fat content that makes them so aromatic and requires that they be processed shortly after being caught. At Conserverie Jean de Luz, the fish is cooked immediately rather than being stored for days. The dense, dark meat possesses enough richness to sustain the mousse without the need for binders. The high proportion of mackerel keeps the terrine dark and savory down to the very last spoonful.

Why the onion turns sweet

Raw, the onion is sharp and pungent; once cooked, it loses that sharpness and releases its natural sugar.

In this terrine, it is cooked along with the fish, not as individual pieces, but as a soft foundation beneath it. Like the olive oil, the organic onions are from certified organic farming, and their proportion is high enough to be the second ingredient on the list. This gives the spread a sweetness that has nothing to do with added sugar.

Storage once opened

Smooth the surface after each spoonful to keep the mousse compact and prevent exposure to air.

Once opened, the jar will keep in the refrigerator for about two weeks; unopened, it should be kept in a cool, dark place.
