Cooking with Cast Iron
You have chosen a Le Creuset cast iron skillet. It certainly takes some time to get used to a cast iron skillet after using a coated aluminum or stainless steel pan, as it has different cooking characteristics. It takes longer to heat up, but then retains heat for longer, cooks more evenly, and the pan develops (and this is important) a patina. At first, these look like dull, grayish spots, usually starting in the center of the pan, until the bottom is covered in them and the many small spots merge into one large patch. This is completely normal behavior for a cast iron skillet. Please do not try to wipe off or otherwise remove the patina. The more patina there is, the better the skillet performs, as the patina acts as a natural non-stick coating. When properly seasoned, the skillet will last for generations. When cooking with cast iron skillets, it is important to always add good oil before placing them on the stove; medium heat is sufficient. To clean, it is usually enough to wipe the skillet with a paper towel; residues can be removed with hot water.
