Searing with cast iron
You have chosen a Le Creuset cast iron skillet. It certainly takes some time to get used to a cast iron skillet after using a coated aluminum or stainless steel pan, as it has different searing properties. It takes longer to heat up, but then retains heat longer, sears more evenly, and—most importantly—the skillet develops a patina. Initially, these appear as dull, grayish spots, usually starting in the center of the skillet until the base is covered with them, eventually merging from many small spots into one large area. This is completely normal behavior for a cast iron skillet. Please do not try to wipe off or otherwise remove the patina. The more patina, the better the skillet performs, as the patina acts as a natural non-stick coating. When properly seasoned, the skillet will last for generations. When cooking with cast iron skillets, it is important to always place them on the stove with good oil; medium heat is sufficient. To clean, it is usually enough to wipe the skillet with a paper towel; residue can be removed with hot water.
