Acacia honey refined with wild berries – rosy & berry-fruity

The acacia honey with wild berries from the organic apiary BIO Imkerei Neber combines mild acacia honey from the Weinviertel region with an infusion of redcurrant, raspberry, strawberry, and elderberry. Delicately rosy, intensely fruity, with a natural berry aroma. A refined honey specialty from Austria.

Acacia honey with wild berries is a honey specialty from the organic apiary BIO Imkerei Neber: light, mild acacia honey from the Weinviertel in Lower Austria, refined with an infusion of redcurrants, raspberries, strawberries, and elderberries. Anton Neber, a master beekeeper since 2002, processes the base product in his own "Honig-GENUSS-keller" (honey indulgence cellar) in Sankt Lorenzen im Mürztal in Upper Styria. What arrives in the 250-gram jar is a fruity honey specialty from Austria – made with natural ingredients and no artificial flavorings.

Rosy, berry-fruity, gentle

In the jar, the acacia honey with wild berries reveals a delicate rosy shimmer; in terms of taste, a strong, multi-layered berry aroma unfolds on the mild acacia base. You can recognize it by its rosy color and dense, fresh-fruity sweetness – redcurrant, raspberry, strawberry, and elderberry harmonize without one berry dominating the others.

The base remains acacia honey – very light, clear, with the mild acacia character of robinia blossoms. To achieve this, Anton Neber takes his Carnica bee colonies to the Weinviertel region east of Vienna from mid- to late May, where a bee colony can collect about 7 kilograms of acacia honey on a good day. The high fructose content ensures that the honey, even when refined with berries, remains spreadable for a long time.

Acacia honey with wild berries – breakfast-ready and in yogurt

The acacia honey with wild berries is right at home on a warm breakfast roll with butter or a slice of crusty bread – the berries bring a summery freshness to the morning. In natural yogurt with a few fresh fruits, it provides a natural berry sweetness without any added sugar.

On a quark dish with vanilla, in warm porridge, or as a small garnish on vanilla ice cream, it adds the rosy hue of the four berries. A teaspoon in your cup of breakfast tea or coffee, dissolved in water below 40 degrees, provides a delicate berry note that pairs unusually well with black and herbal teas.

Three generations of beekeeping from Upper Styria

Behind the organic apiary BIO Imkerei Neber are Anton and Gerlinde Neber, a third-generation family apiary from Sankt Lorenzen im Mürztal in Upper Styria. Anton passed his master beekeeper exam at the Styrian Beekeeping School in 2002 and has worked with the native Carnica bee ever since. Gerlinde manages the partnership and handles sales in the "Honig-GENUSS-keller."

Anton Neber sees himself as a honey refiner: in addition to single-varietal honeys, his range includes an unusually broad spectrum of refined specialties with Bourbon vanilla, gold leaf, chopped pumpkin seeds, wild berries, or cornelian cherries. For the wild berries, Gerlinde and Anton Neber ensure the best ingredients from the region, as he describes the refinement concept during discussions about the product range. Since 2007, the honey has been extracted gently in the in-house "Honig-GENUSS-keller" without heating. In the range of the BIO Imkerei Neber, you will find other refined specialties and single-varietal organic honeys from Austria.

Stored in the dark between ten and eighteen degrees

It should be stored in a dark and cool place between 10 and 18 degrees Celsius. If the consistency becomes firmer, warm it in a water bath at a maximum of 40 degrees for five to ten minutes – this preserves the enzymes. Never heat in the microwave. Those who collect honey specialties should place it next to the acacia honey with wild cherries – both are based on the same acacia foundation, but taste completely different – one is berry-round, the other intensely cherry-flavored.
