Juicy Pinot Gris from the Palatinate by Oliver Zeter

Oliver Zeter's Pinot Gris is a juicy, dry white wine from the loess and loam soils of the Southern Palatinate. The must clarifies itself naturally, a portion ferments spontaneously in wooden barrels, and in the glass, the 2024 vintage shows fullness, freshness, and a delicate creaminess.

Pinot Gris 2024 is the estate wine of this grape variety from Oliver Zeter in the Palatinate, grown over limestone and slowly fermented in stainless steel. With 12.5% ABV, it carries enough body for a warm meal while remaining pleasantly dry and juicy.

Ripe pear, apple, and meadow herbs

In its aroma, the Pinot Gris from the Palatinate by Oliver Zeter displays local pome fruit, primarily ripe pear and apple, accompanied by a fresh hint of grapefruit and lychee. On the palate, it is full and juicy, and a fine creaminess coats the fruit, making it seem round despite its dry finish.

Finally, notes of meadow herbs emerge, keeping the wine vibrant and giving it a slightly spicy edge. In this way, it clearly shows what defines the grape variety. A good Pinot Gris combines fullness and freshness, and both have found their place in this vintage.

Loess, limestone, and must that clarifies itself

The vines grow in the Southern Palatinate on loess and loam soils with limestone in the subsoil, on slopes facing south. Each vine is trained to a single cane, which limits the yield from the start. In summer, excess bunches are cut away and the leaves are thinned by hand so that the remaining berries can gather more strength.

After the harvest, the grapes go directly into the press. During pressing, oxygen is kept out as much as possible because otherwise aroma would be lost. The must then rests until the sediment has settled to the bottom on its own. Only the clear juice begins to ferment in stainless steel at around 18 degrees, and this process is intentionally slow.

A portion of the batch ferments spontaneously in wooden barrels, using only the wild yeasts from the vineyard and cellar, which adds depth to the wine. After time on the fine lees, Oliver Zeter bottles it unfined and only lightly filtered.

Flammkuchen, veal schnitzel, and mushroom risotto

Flammkuchen with bacon and onions, a breaded veal schnitzel, or a creamy mushroom risotto are the obvious partners, because the Pinot Gris from the Palatinate has enough body for these dishes. Its freshness cuts through the fat, and the fruit remains clearly discernible alongside cream and butter. It also pairs well with potato soup with marjoram or light poultry in a cream sauce.

At 10 to 12 degrees in the glass, its juicy fruit is at its clearest, so it needs a few minutes at the table straight from the fridge for the bouquet to open up. Because the bottle has a screw cap, any remaining wine will keep well until the next evening.

If you would like to get to know the younger vintage, you can find it in the Pinot Gris 2025, a third of which was fermented in wood. Coming from the same cellar is the Pinot Blanc 2025, and you can find further white wines in our category White Wine.
