Organic Chardonnay from quartzite in the Palatinate
The 2025 Chardonnay Quarzit from Weingut Pflüger is a dry organic white wine from Bad Dürkheim. Fresh, juicy, salty-mineral. A young vintage with tension that highlights the fruit and eschews heavy oak.
Chardonnay Quarzit 2025 from Weingut Pflüger bears the soil in its name. Growing on the quartzite rock of the Palatinate, this organic Chardonnay features a fine, salty minerality—straightforward and honest, with a medium body, a lively acidity of 6.3 g/l, and 13% vol. The young vintage is particularly fresh and invigorating.
Fresh grapes, banana, a hint of mandarin
The nose is filled with crisp grapes, subtle banana, and juicy mandarin, accompanied by that cool, almost salty touch only provided by quartzite. A bouquet that immediately makes you crave the first sip.
On the palate, the Chardonnay Quarzit is present yet finely woven, with an elegant creaminess kept in shape by the lively acidity of the vintage. Juicy, clear, animating—a wine that demands a second glass without ever becoming intrusive.
With pan-fried fish and spaghetti alle vongole
This Chardonnay pairs with a wide variety of dishes and leaves a lasting impression. Its delicate fruit and salty vein make it a bright, alert companion for light meals.
Well-chilled at 9 to 11 degrees, it is perfect in the glass with pan-fried fish, spaghetti alle vongole, or grilled vegetables with lemon. The minerality picks up on the maritime notes and carries them further, while the wine reveals its creamy side alongside a mild fresh goat cheese. This makes it a suitable partner for any course throughout a summer evening. For those seeking even more freshness, try the Palatinate Sauvignon Blanc from quartzite.
Quartzite soil and a biodynamic signature
The vines for this Chardonnay grow in organically managed vineyards in the municipalities of Bad Dürkheim and Friedelsheim. All share the quartzite rock in the subsoil, which imparts the fine, salty minerality to the wine.
Alexander Pflüger has been working biodynamically since the 2008 vintage, eschewing artificial fertilizers, herbicides, and insecticides, and aligning his work with the cycles of the seasons and the moon—as Alexander has done for years—the winery is Demeter-certified. In the press house opposite the salt works in Bad Dürkheim, the grapes are gently pressed and the must undergoes spontaneous fermentation.
The Chardonnay stays on the lees for a long time and matures in stainless steel tanks, allowing it to best showcase its fruitiness. The longer it rests on the fine lees, the rounder the wine becomes on the palate, without sacrificing the youthful freshness of the vintage. The result is a Chardonnay that unites the warmth of the Palatinate and the coolness of the stone in a single sip.
It belongs in a bulbous white wine glass
Serve it well-chilled at 9 to 11 degrees in a bulbous white wine glass to best showcase its fruit. Once opened, it stays fresh for two to three days if kept chilled.
