Sawade Nougat Praline Box with five varieties of nougat
The Sawade Nougat Praline Box is a selection of ten pralines, all based on roasted almond and hazelnut nougat. It contains Florentine roses, nougat brittle, pistachio nougat, dark nut nougat, and a piece topped with whole nuts, with two of each variety.
Nougat Praline Box is the nut selection from Sawade in Berlin-Reinickendorf, ten pieces totaling 105 grams in a dove-blue box with a lid that bears only a single word in the top left corner. None of the five varieties contain alcohol, making the box suitable for serving in the afternoon.
From the open rose to the whole nut
The dove-blue lid sits loosely on the box and can be lifted with two fingers, revealing the ten pieces on gold cardboard, alternating between light and dark.
The Florentine rose is piped into a star shape and remains open at the top, only dipped on its underside, which allows the almond nougat to come through completely unadorned. Next to it, the nougat brittle crunches, its burnt sugar shattering when bitten into.
The pistachio nougat displays its green nut openly, the dark nut nougat comes under a dark chocolate coating, and the fifth variety features whole nuts on top. Melting, crunching, lingering—three registers that all emerge from the same base mass.
Taken from a cool hallway, nougat remains dull, as the nut fat only releases its fragrance at room temperature. Ten minutes on the table with the lid open is enough for this.
Why the rose remains open at the top
A piece that is only dipped in chocolate at the bottom has no protective shell and releases its aroma immediately. For this reason, it is the most delicate in the box and tolerates neither heat nor dry air.
At Sawade, the rose is piped using a star nozzle, and because a hand never applies pressure the exact same way twice, each one has a different swirl. That is why no two pralines in this box look exactly alike.
Almonds rank higher in the recipe than hazelnuts, even though the word "nougat" typically brings hazelnuts to mind. The almond provides the soft foundation, the hazelnut adds its roast, and the pistachio provides the final green accent.
Sawade roasts the nuts fresh and deliberately avoids artificial flavors or preservatives as well as palm oil, because in a mixture of nut and sugar, any filler is immediately noticeable.
With black coffee and strong Assam
The box goes well with black coffee, strong Assam tea, and a glass of cold milk in between, which clears the sweetness between pieces. Giving this as a gift is a commitment, as everything here revolves around the nut.
Stored in a dark, dry place at 15 to 18 degrees, the coating remains shiny, while radiator heat causes it to turn gray and the refrigerator strips the nougat of its melt. Above twenty degrees, the open rose is the first to give way and lose its shape.
Almond, hazelnut, and pistachio are all in the recipe and carry this selection from the first to the last praline without any one of the three overshadowing the others. For a coffee table where opinions on marzipan may differ, this is the more reliable choice.
Those who prefer almonds over hazelnuts should reach for the Marzipan Selection; those who cannot decide should opt for the Mixed Praline Box. The entire Berlin assortment can be found at Sawade Berlin, and more nutty options in our chocolate collection.
