Sawade Truffle Chocolate Box with Five Ganaches
The Sawade Truffle Chocolate Box is a selection of ten truffles in five varieties, all of which contain spirits. The "Herren" (Gentlemen's) truffle, Cognac Cream, Marc de Champagne, Kir Royal, and Rum Raisin truffle are arranged in pairs.
The Truffle Chocolate Box is the premier truffle selection from Sawade in Berlin-Reinickendorf: ten pieces totaling 125 grams, presented in the company's signature flat ochre-yellow box. Because every variety contains alcohol, this box belongs on the evening table rather than at a coffee gathering with children.
Five ganaches and five finishes
Lift the lid and the entire row is revealed: ten spheres with five different finishes, from snow-white powdered to dark and textured, ensuring no two look exactly alike.
The "Herren" truffle sets the deepest tone, featuring a butter-cream ganache with brandy encased in dark chocolate. The Cognac Cream truffle bears a caramelized crust of raw cane sugar, and the Marc de Champagne is served under a fine dusting of powdered sugar.
The Kir Royal borrows its name from the aperitif made of blackcurrant and sparkling wine, and this acidity is immediately noticeable among the other four varieties. Blueberry juice further darkens its profile.
At the other end sits the little white chocolate pot filled with caramel truffle and sultanas soaked in Jamaican rum, which provide a sudden burst of fruit when chewed. Soft, warm, and lingering—this is how these ten pieces build upon one another.
Why a truffle needs a coating
Filled pralines are molded, whereas a truffle is piped using a piping bag and then powdered, rolled, or tumbled. This is precisely what gives it the soft bite that molded fillings cannot achieve.
Freshly piped ganache has an open, sticky surface that is difficult to handle. The powdered sugar on the Marc de Champagne and the brown sugar on the Cognac truffle provide a dry "skin" that also contributes to the flavor.
The little pot for the Rum Raisin is made in reverse: the thin shell of white chocolate is cooled first, and the caramel is added afterward. The thinner the wall, the less it interferes with the filling.
Butter, cream, and fine cocoa are delivered fresh daily, and Sawade consciously avoids artificial flavors, preservatives, and palm oil. With a filling made of fat, sugar, and spirits, any shortcut would be immediately obvious.
With port wine and an evening without a clock
The ochre-yellow box belongs next to a port wine or an aged rum; three truffles in a row can define an entire evening. A sugarless espresso clears the butter away afterward, and water helps in between.
This selection does not like heat at all, as ganache with so much butter and cream begins to soften under your fingers at temperatures above twenty degrees Celsius. Keep them in a dark, dry place at 15 to 18 degrees, and each sphere will retain its shape.
Because every single sphere at Sawade is coated and garnished individually, no truffle looks exactly like the next. In summer, the box is better carried in your hand luggage than in a package left in the sun for days. Five varieties across ten pieces also mean that no one at the table has to take the same one twice before everyone has had a turn.
