Real tuber, honest process
As with its white sibling product, Tartuflanghe relies on freeze-drying instead of added flavorings: there is 0.3 percent dried Tuber aestivum in the jar, the equivalent of 1.5 percent fresh truffle. The black specks in the salt are therefore not just decoration, but the tuber itself – forest floor to sprinkle.
The black summer truffle is the most relaxed of the gourmet mushrooms: earthy, nutty, with a fine cocoa note – more robust in character than the white truffle, but never overpowering. Together with the mild, mineral Guérande salt, this results in a seasoning that works daily – and that you can see: the dark truffle specks are evenly distributed throughout the grey salt, a small promise in every jar. Stored in a dry place, the aroma lasts for many months.

Tartuflanghe was founded in 1975 by Domenica Bertolusso and Beppe Montanaro – following years of truffle trading that began in 1968 in their restaurant in Alba, which was recognized by the Michelin Guide for its mushroom and truffle cuisine. Today, Stefania and Paolo Montanaro continue to run the family business in Piobesi d'Alba.
