Organic Gingerbread St. Nicholas, the round treat for December 6th
Organic Gingerbread St. Nicholas is a small, round honey gingerbread from South Tyrol, baked by hand and decorated with an image of St. Nicholas. The dough, made from rye, wheat, and honey, is scented with cinnamon, cloves, and anise. A 60g treat for St. Nicholas Day.
Organic Gingerbread St. Nicholas is the round gingerbread from the Ultner Brot bakery, baked with rye and wheat flour, honey, butter, and gingerbread spice. At 60g, it is the small, handy version in the Christmas assortment, perfect for St. Nicholas plates and advent calendars.
Small, round, and spiced
Spicy, moist, and handy, the little St. Nicholas gingerbread is a round treat that you can hold right in your hand and eat in just a few bites.
At 60g, it is significantly smaller than the large gingerbread figures, so it fits into any boot, any advent calendar pocket, and any cookie plate, no matter how crowded it is. The round disc is ideal for children's hands because it doesn't break as easily as a thin figure with arms and legs, and it even survives a trip in a coat pocket.
The small gingerbread tastes moist, spicy, and honey-sweet, with the warm scent of cinnamon, cloves, and anise. The honey keeps it soft, the traditional leavening agents potassium carbonate and ammonium bicarbonate make the crumb light, and it is baked using whole rye and wheat flour.
So, it’s not a hard pastry, but a gingerbread that you can bite into without any effort and that remains soft even after days. It is sweetened only with honey and a little cane sugar, which you can taste in the clear, robust spiciness.
For St. Nicholas Day on December 6th
On December 6th, children put their boots out by the door, and this round gingerbread fits perfectly into this old tradition.
The custom goes back to St. Nicholas of Myra, who, according to legend, gave gifts to those in need. To this day, his feast day fills boots and plates with nuts, tangerines, and, of course, gingerbread. In South Tyrol, St. Nicholas traditionally travels through the villages with an entourage—a custom that many families still maintain today.
In addition to the St. Nicholas plate, the small gingerbread also finds its place in an advent calendar or as a treat on the coffee table when guests arrive. In a bag with a ribbon, a few gingerbread cookies quickly become a small gift for neighbors and colleagues. Those who prefer something larger will find the Organic Gingerbread Santa Claus at 100g, and for the holidays, the Nut Stollen is a perfect fit for the table.
Handmade in St. Walburg
Ultner Brot bakes these gingerbread cookies in St. Walburg in the Ultental valley, where the Schwienbacher family has been making bread and pastries since 1919.
Master baker Hannes Schwienbacher runs the house in the fourth generation; the bakery has been working exclusively with organic ingredients since 1982. The small gingerbread cookies are also made from the best organic ingredients, with real honey and butter, and the grain is ground in their own mill in the valley.
Because every gingerbread is shaped and decorated by hand, no two St. Nicholas figures look exactly the same, and that is exactly what makes them beautiful. Over 100 years of baking experience are packed into this little piece of Christmas pastry. You can find the entire Ultner assortment with further South Tyrolean Christmas specialties and breads right here on the shelf.
