Mini Spelt Cheese Grissini are the small, cheesy siblings of classic grissini—short sticks for snacking instead of long breadsticks. Ultner Brot bakes them using spelt flour and wholemeal spelt with 28% Emmental cheese, seasoned with oregano, basil, and pepper. Savory, crunchy, and just the right size for a handful.
Emmental and Mediterranean herbs
What makes these mini grissini so savory is the high cheese content; 28% Emmental is packed into the dough, giving the sticks their tangy, nutty cheese flavor.
Emmental is the ideal cheese for this—mild enough not to overpower, and savory enough to hold its own in the crispy dough. During baking, it caramelizes slightly on the surface, adding a delicate roasted note to the sticks. You can taste in every single stick that they are made with real cheese rather than just cheese flavoring.
Added to this are herbs of Italian cuisine, oregano and basil, a hint of pepper, and a few sesame seeds. The spelt dough is prepared with extra virgin olive oil, shaped into short sticks, and baked until crispy and the edges of the cheese turn golden brown.
Savory, crunchy, and zesty, they break with a satisfying snap. Because they are baked with spelt instead of wheat, they have a slightly nutty base note that allows the cheese flavor to shine through particularly well.

Master baker Hannes Schwienbacher runs the house in the fourth generation; the bakery has been working exclusively with organic ingredients since 1982.
