75% Couverture is Bonnat's intensely dark couverture in the form of small chocolate coins for baking and melting. With 75% cocoa, it is robust and tart, with little sugar, and melts into a beautiful liquid consistency thanks to its high cocoa butter content. A 500-gram resealable bag.

For robust cakes, ganache, and mousse

The pistoles are conveniently portioned: you can sprinkle them directly into the batter or melt them in a bain-marie.

With 75% cocoa, it gives pastries a deep, dark chocolate flavor that doesn't disappear when combined with sugar and flour. It is the top choice for rich brownies, dark ganache, truffles, or a tart chocolate mousse.

When melted, it becomes glossy and fluid, ideal for a coating that snaps nicely when it sets. For those who prefer a particularly consistent finish, temper the mass briefly: heat gently, cool down, then warm slightly again; this ensures the coating stays smooth and snaps cleanly when dry.

For especially intense truffles, the ganache requires more chocolate than cream; it then becomes firmer and more chocolaty, and keeps for a few days when refrigerated.

Robust, tart, with little sugar

At 75% cocoa, this bar is significantly darker and more tart than the 65% version, offering a full, long-lasting chocolate flavor.

About a quarter is sugar, the rest is pure cocoa, with absolutely no soy lecithin. In French, these coins are called "Palets de Chocolat Noir," small dark chocolate coins for patisserie. While delicious on its own, its true strength lies in baking, where the high cocoa content holds its own even alongside butter and sugar.

Those who prefer a robust flavor for baking are in the right place; those who prefer something milder should reach for the lighter 65% couverture.

Vegan, dairy-free, and nut-free

The couverture consists only of cocoa, cocoa butter, and sugar, with no milk, soy, or emulsifiers.

This makes it vegan, gluten-free, lactose-free, and entirely free of nut traces, allowing nut allergy sufferers to bake and snack without worry. This is a nice safety feature, especially when baking for guests. For those baking for people with nut allergies, this bar provides a reliable base that still tastes like truly high-quality chocolate rather than cheap baking supplies.

From Voiron since 1884

The Chocolaterie Bonnat was founded in 1884 by Félix Bonnat in Voiron and is currently run by the fourth generation, Stéphane Bonnat.

Bonnat is known for dark single-origin chocolates and processes each origin individually, bean-to-bar, conched for around 20 hours. The company uses that same high-quality cocoa so that you can bake at home with the same quality that Bonnat has produced for over 140 years. Félix Bonnat began roasting his own cocoa in 1884, and this standard for quality raw materials remains in effect today for every bar and every bag.

The 65% Couverture is slightly milder; for something even more intense and completely sugar-free, choose the Noir 100%. However, the 75% Couverture is the robust choice for anyone who loves dark chocolate.
