Why Pinova fills half the pack

Six Pinova bottles means: the juice that won the national title at the Mostbarkeiten awards in 2019, making it the best fruit juice in Italy, is the house favorite here.

The Pinova comes from Pillnitz near Dresden and finds the cool climate it needs on the Ritten. Pressed as a single-varietal, with no additives, it displays a peach aroma and a hint of honey, along with a play of acidity that ensures it never becomes cloying. It pairs well with light roasts and mountain cheese, and sits as naturally on the lunch table as a glass of wine.

The second fruit makes the difference

The three cuvées each introduce a second fruit, shifting the apple profile in a new direction.

The apple juice with pear is the gentlest in the pack: eighty percent mountain apple, twenty percent pear purée, velvety and rounded. The apricot brings twenty percent fruit purée from the Vinschgau and glows orange, sweet-tart, with a trace of the stone. At fifteen percent, the blackcurrant is the most sparing addition and at the same time the most distinct – night-blue, tart, with a long finish.

Two bottles of each variety are enough for a weekend with guests, without any one flavor dominating the evening. At Kohl, the dosage is no accident, but the true craft: as much second fruit as necessary to make it recognizable, and as little as possible so that the mountain apple retains its structure.

Hand-picked at nine hundred to one thousand meters

All apples in the pack grow around the Troidner Hof, the Kohl family’s mountain farm above Bolzano, and are picked by hand, variety by variety, in several passes.

The altitude makes the difference: cool nights, warm days, a long ripening period. What comes off the tree in the morning goes into the press the next day. The juices are preserved solely through gentle pasteurization in the bottle – nothing is filtered, which is why the cloudiness remains in the glass, along with the flavor.

How to store and serve the bottles

Unopened, the bottles will keep in a cool, dark place for at least a year; once opened, they stay fresh in the refrigerator for about six days. All four varieties should be served at 8 to 10 degrees in a stemmed glass, as Thomas Kohl recommends for all his juices. The Ruby Red apple juice pack is redder, while the Sunshine pack is yellower.
