Apple juice with pineapple is a creation by mountain apple juice affineur Thomas Kohl from the Renon plateau in South Tyrol: an exotic play of aromas between the sunny sweetness of pineapple and harmonious mountain apple juice. A beautiful yellow with a green undertone, with a distinct pineapple scent and fresh, exotic aromas.

The juice is lively yet harmonious, with a clean finish—exotic, juicy, cheerful. Taste, texture, color, interplay of aromas—all together make this cuvée a juice for joyful hours. The two get along surprisingly well: the apple provides structure and leaves room for the pineapple to take on the more dominant role.

With curry, blue cheese, and pancakes

"Our mountain apple juice and pineapple cuvée, with its exotic aromas, pairs excellently with rice salad with vegetables, curry dishes, blue cheese, yeast pastries, and pancakes," reveals Thomas Kohl.

In a curry with plenty of vegetables, the pineapple absorbs the heat, and the apple provides a counterpoint. Something similar happens with blue cheese—the sweetness spreads over the saltiness, and the acidity takes it back afterward. For pancakes on a Sunday morning, it suits them better than anything else in the fridge anyway.

The Italians and their pineapple

Thomas Kohl grows the apples on the Renon himself, but the pineapple has to travel—and yet it belongs in this bottle. In Italy, people love to drink pineapple juice, and the desire of Kohl's customers for an apple-pineapple cuvée was correspondingly high.

However, the search for the perfect pineapple—juicy, sweet, and ripe—took time; only a fully ripened fruit provides the sweetness that carries this cuvée. Now it has succeeded: a cuvée in which two juices dance with one another.

Fresh and with a well-structured base of mountain apple juice, the exotic play of aromas and the sunny sweetness of the pineapple are elegantly integrated and balanced. How exciting it is when lively aromas from different worlds meet: both flavors remain recognizable and yet flow into each other.

Structure from the mountain, sun from far away

What carries this cuvée is the mountain apple: it grows on the Renon around the Troidner Hof, whose orchards lie at a good nine hundred to just under one thousand meters. There, long sunny days are followed by cool nights.

The greater this difference is, the more acidity the fruit retains—and that is exactly what is needed so that a pineapple doesn't tip into being cloying. No one should overpower the other—that is how Thomas handles all his cuvées. He earned the right to call himself Italy's first apple juice affineur with combinations like these.

Every ingredient is processed at peak ripeness and preserved solely through gentle pasteurization. It is also certified as vegan by the European Vegetarian Union.

Too warm and the pineapple loses out, too cold and the apple does

Pour it into a stemmed glass, at 8 to 10 degrees—then the exotic aromas unfold just as they would with a wine. Served too warm, the pineapple loses its freshness; served too cold, the apple closes up.

Once opened, the bottle will keep chilled for about 6 days; stored closed and in the dark, it will last a year or longer. We toast to this creation by Thomas Kohl. More domestic are the apple juice with apricot and the apple juice with peach, both of which can be found in the Kohl Cuvées.
