Apple juice with carrot is Thomas Kohl's most unconventional vegetable cuvée: sweet mountain apple from the tree meets crisp carrot with its earthy notes – and the two find common ground surprisingly quickly. Thomas Kohl couldn't let go of the idea until the mixing ratio was just right.

The cuvée has a bright orange hue in the glass, as vibrant in color as the vegetable itself. The sweet notes of apple and carrot balance out the contrasts: the earthy becomes nutty, the acidity mellows slightly, and two bold flavors merge into a harmonious whole.

What remains is a juice with its feet on the ground – easy-drinking, savory, earthy, and yet light enough for the whole afternoon. In Italy, it is one of the most popular juices from Kohl.

Pairs with rich fish, risotto, and Asian dishes

The apple juice with carrot accompanies hearty fish dishes, savory risotto, and Asian cuisine – food where a delicate juice would be overshadowed, but where this one holds its own.

You have to be daring to add a carrot to apple juice – and that is exactly why the idea appealed to Thomas Kohl.

The trick lies in the ratio: too much carrot and the earthy flavor takes over; too little, and it goes unnoticed. In between lies a narrow range that Thomas tested until the ratio was perfect. That is precisely the art of refining, as Thomas understands it – both partners must win. With this cuvée, it means: the carrot loses its heaviness, the apple gains depth, and the result is something entirely new in the glass that requires both components to work.

Bronze at the 2019 Mostbarkeiten

At the Alps-Adriatic Mostbarkeiten tasting in Carinthia, the mountain apple juice with carrot scored 15 out of 20 points and took home the bronze – a remarkable result for a vegetable-based cuvée.

There were about 1,600 entries from five countries at the time of the tasting, evaluated by a 25-member expert jury, as detailed in Kohl's review of the event. The mountain apples for this juice grow in Ritten, where the family's orchards are located between 900 and just under 1,000 meters above sea level – an altitude that preserves the fruit's acidity.

Serve chilled, between 8 and 10 degrees, and please use a stemmed glass – that is where the carrot shows its nutty side most clearly.
