The vintage sardines from La Quiberonnaise are not only a taste sensation, their colorful cans make them unique. This classic version with 4 to 6 sardines in extra virgin olive oil in the red can shows a historical view of the port of Quiberon and is, alongside the yellow can with sardines in peanut oil, one of the cannery's traditional recipes.

The Jourdan family has operated their cannery since 1921. Even then, canned fish with pickled sardines, which preserved fresh fish for a long time, were a valuable contribution to the diet of fishermen and their families and the inhabitants of coastal villages. What was once considered simple fare is now a prized delicacy, especially when it is of such high quality as those from La Quiberonnaise. Freshly caught fish, not frozen goods, is transformed into a can of vintage sardines through many steps, almost exclusively by hand.

Traditionally, the sardines are cleaned, salted overnight, dried, then fried, freed from head and tail, and placed in extra virgin olive oil in small cans. With a little patience, the sardines mature in the Mediterranean oil over time; their taste and consistency become finer and more tender. The result is a top-quality product that cannot be compared to carelessly produced industrial goods.
