La Sablésienne's lemon cookies are round, scalloped butter sablés from France with finely tart pieces of lemon. A petit sablé made using traditional craftsmanship, buttery and fresh all at once – not a mass-produced, artificially flavored biscuit.

Lemon cookies from La Sablésienne are French butter biscuits from Sablé-sur-Sarthe, with small pieces of lemon and a hint of essential lemon oil baked into their crumbly dough. The citrus freshness lifts the butter and makes the cookie light – in France, they are known as Les Petits Sablés au citron. Free-range eggs, quality butter, and flour from western France form the base. Few ingredients, a lot of craftsmanship, and a cookie that tastes like a holiday.

Buttery, crumbly, with a splash of lemon

The sablé breaks apart crumbly and buttery, then comes the lemon, bright and fresh, with a fine acidity.

Buttery, fresh, sunny – that’s how the cookie dances on the tongue. The small pieces of lemon and the essential oil provide genuine citrus freshness, completely free of artificial flavoring. The sablé lies in the hand lightly speckled with yellow, round and finely scalloped. It tastes of the south, of an afternoon in the shade, and never of lemon candy. Those who love lemon will find its fine, unobtrusive side here.

With tea, sorbet, and a bright afternoon

Paired with black or green tea, these lemon cookies are a fresh companion, light and summery – a cookie for bright, carefree hours.

The lemon sablé likes Earl Grey and green tea just as much as a glass of cold lemonade or a Prosecco in the summer. Crumbled up, it provides a base for a lemon tart or a no-bake cheesecake, and sprinkled over a lemon sorbet, it becomes a crunchy contrast. With the fruity raspberry sablés on a plate, it shines in yellow and pink. And at breakfast, next to a bowl of yogurt with honey, it brings freshness to the morning.

The favorite cookie of a refined Marquise

The petit sablé dates back to Madeleine de Souvré, the Marquise de Sablé, celebrated as the greatest gourmet of her time. The finest palates in the country met in her Parisian salons.

"La Marquise de Sablé is the greatest gourmet in the world," wrote the chronicler Tallemant des Réaux about her – and the small round butter cookie that caused a sensation at court in July 1670 still bears her name and that of her town, Sablé-sur-Sarthe, to this day. The petit sablé pur beurre is part of France's culinary heritage and the Larousse Culinaire.

Georges Justier built the biscuit factory in 1962; Amélie Loret Scherrer has been running it since 2003. Each sablé is kneaded, shaped, and stamped by hand and picked up individually – without dyes, without preservatives. That is how summer from Sablé tastes real, not artificial. You can find the other varieties in the La Sablésienne range, which pairs perfectly with a fresh tea.

With iced tea or lemon sorbet

Inside the square 100g box are four bags containing four sablés each, so the lemon stays fresh when you open one. On a warm day with a glass of iced tea or a scoop of lemon sorbet, these lemon cookies show just how light France can taste – a little bit of summer for in between.
