Cuneesi Salted Caramel, or Caramello Salato in Italian, is the large praline from Piedmont in its most exciting edition: a creamy milk chocolate ganache with salted caramel, coated in bittersweet dark chocolate. The caramel provides the sweetness, a pinch of salt adds the accent, and the dark shell keeps everything in balance. Sweet caramel meets a pinch of salt

First the bittersweet dark chocolate, then the soft caramel, and right in the middle, the salt sparkles, bringing the whole praline to life. It is precisely this interplay that makes you crave a second one.

The Cuneesi Salted Caramel thrives on contrast: sweet, salty, and bitter in a single bite. The salted caramel is creamy and rounded, the pinch of salt brings out the sweetness rather than masking it, and the dark chocolate shell adds roasted notes and a fine bitterness. Handcrafted in every praline

Like all Cuneesi, the Salted Caramel version is crafted by hand, praline by praline, in the chocolatier’s workshop in Piedmont.

The creamy ganache is placed onto a small chocolate base and, after cooling, dipped in dark chocolate, giving each Cuneese its own slightly irregular shape. The hard shell and the soft filling create a little sequence of crunch and melt in every bite.

Each one weighs around 20 g and is wrapped in light blue paper and packaged by hand. We pack 5 pieces into a small bag with a ribbon for you, perfect for gifting or for your own stash.

From the chocolatier in Fossano

Behind Mandrile Melis are Giuseppe Mandrile and Maria Antonietta Melis, who founded their chocolate house in 1986 in Fossano, near Cuneo.

Over the course of some 40 years, the original recipe—the famous Rum Cuneesi—has grown into a manufactory with over 40 varieties, ranging from the classic to the playful. This large praline has been a staple of Piedmont for about 100 years, and Mandrile Melis continues this tradition just as Giuseppe and Maria Antonietta began it: with quality ingredients and plenty of handiwork.

Cuneo, the city at the foot of the Alps, gave this large praline its name, and it is still made in Fossano, just a few kilometers away, to this day. Salted caramel represents the modern, playful side of an old tradition where every nuance counts, precisely because salt requires such precise dosing.
